Whats cooking?

I am on the ball this week so i figured I would start, plus probably the only one working!

Sun- DH made gravy which includes meatballs, sausage, veal and pork and pasta was cavatellis

Mon- kids are having leftovers since he made enough pasta for an army, DH and I are having salmon and salad

Tues- chicken cordon blu over rice and baked zucchini

Wed- turkey london broil, baked parmesean potatoes alla pinterest, carrots/peas

Thurs- orecchiette pasta with sausage and broccoli rabe, salad

Fri- pizza night

Sat- out for a school fundraise

  • Sunday night I made a cheesesteak stromboli.

    Mon - leftover stromboli

    Tues - chili in the crockpot, cornbread

    Weds/Thurs - leftover chili or salmon/sweet potato fries, asparagus

    Fri - pizza night

  • Last night we used a gift card and went to Red Robin.  Not so yummm.  Bummer.

    Tonight DH and I are eating various leftovers from eating out the past couple of days- DD started with a fever this afternoon and has been sleeping for a couple of hours so she is sleeping through dinner, which means she'll be up at midnight asking to eat.

    Tomorrow will be rosemary chicken and potatoes- actually leftovers my dad gave us from a dinner he cooked too much of the other day.

    Not sure about the rest of the week.  DH has a meeting Wednesday evening that he thinks he may be fed at- waiting to see- if he is I will just have soup or something.  Thursday we have a funeral to go to and aren't sure what time we'll be home, so we may just play that by ear too.  Friday night we have to teach Pre-Cana- no dinner provided, but they are making us come for a "cocktail reception" from 7-9:30.  Ugh.  So we may be doing take-out or simple stuff again.  Saturday DH is taking his dad to dinner for his 60th.  As per usual, his dad does not want anyone except DH and his brother to attend, so I'm again solo for dinner...being as we will have been teaching Pre-Cana all day, it will once again be some sort of quick throw-together or take-out.  

    This week looks so ugly for food.

  • Mon - I made a whole chicken in the crockpot and it turned out well! Roasted cauliflower and lemon parm cous cous too.  Currently making stock (also in the crockpot!) from the inedibles. And I'm going to make a really delicious non-mayo chicken salad for lunches with the leftover chicken.

    Tues - Potato, Leek and Cheese Bake with a side of eggs

    Wed -  Mexican burgers (topped with salsa, avocado & cheddar), baked sweet potatoes

    Thur - Avocado pasta, roasted carrots

    Fri - Zucchini & eggplant lasagna

  • Yesterday I made chili in the crockpot.  I didn't like the way it turned out.  DH said it tasted great.  I don't know if my chili powder was old.  It just had this off taste.

    I cannot beging to describe to you how lazy I was with the ribs.  I sort of made up my own dry rub with Lawry's seasoning salt, onion powder, garlic powder, white pepper and I think paprika? 

    Then I just dumped bbq sauce (the homemade stuff I whipped up last week) all over it and cooked them on low for 7 hours.  They were fall off the bone tender.  I only had less than 2lbs of ribs.

  • I didn't plan this week so this isn't going to go well.

    Sun- pizza for DS.  DH and I had events so we ate there. 

    Mon- take out

    Tues- baked mac and cheese with ham and peas

    Weds- Turkey Florentine meatballs and pasta

    Thurs- leftover mac and cheese

    Fri- ????

    We have leftover soups and chili in the freezer.  I was hoping those would last us a longer while since I just made them last week but we might end up needing to use them because we haven't gone shopping.  Last week was insane and so was the weekend.  I feel like we are so far behind.

  • Last night: Homemade tortellini soup and grilled cheese.

    Tonight: Mexican with my fellow IVF'ers!

    Tomorrow: DH is making chicken tonight so I'll probably eat some of that

    Thursday: home made stromboli

    Friday: Another late afternoon at CHOP so who the heck knows.

  • Last night I made spaghetti with homemade meatballs and sauce. I even made my own bread and it turned out really good!

    tonight I am making an herb roasted whole chicken with rice and mixed veg

    W - oven fried pork chops with Mac and cheese and green beans

    Th - H is out so I will just have leftovers

     F - fish and chips with corn

    S -  chicken enchiladas

    This is similar to the recipe NQ posted a few weeks back.  I made it but I think it cooked too long (probably 8 hours because I was at work) - the white meat was really dry (and the only part not covered in liquid.  Do you cook it upside down? Or do you have a crockpot that turns to warm automatically?

    I cooked the chicken breast down so it was submerged in the juices.

    Also, I had off yesterday so it was easy to do with the 4 hour cook time.  I could never do it during the week because I'm out for 10 hours.
