Super bowl

I know none of us really care about those playing (and so help me if Ray Ray wins) but anyone making any good food? We are having a few friends over.

We have a case of crablegs to finish in the freezer from new years. And I will probably make a couple sides and dips.   • I was considering doing something, but have made no plans. At the very least I am probably making chili and cornbread. 
  • I usually do an appetizer spread over the course of Super Bowl Sunday, so I'm trying to find apps that are tasty yet not terrible for you. Easier said than done:)

  • I don't know that we'll even watch it, but if I make something - it would probably be the black bean dip that I loooove.

    1 can black beans, drained and rinsed
    1 can shoepeg corn, drained
    1 ? 6 oz. package crumbled feta cheese
    4 green onions, chopped

     

    1/3 cup apple cider vinegar

    1/3 cup olive oil

    1/3 cup sugar (or less, depending on your taste)

    Chop green onions. Combine onions with black beans, corn, and crumbled feta. Whisk together vinegar, olive oil, and sugar. Pour over other ingredients and toss. Chill. Serve with tortilla chips.

     

    I also make a Mexican lasagna dip that everyone loves.

    1 lb ground beef

    1 jar salsa

    1 can chopped green chiles

    2 cans refried beans

    1 can black olives

    1 packet taco seasoning

    1 small onion, chopped

    2 cups shredded cheddar cheese

    1 8oz container sour cream

    Brown the ground beef and onions in a skillet. Once completed, add the taco seasoning as directed on the package and simmer.

    Mix together the meat mixture with all of the other ingredients except the cheddar and sour cream. Put into a 9x13 pan. Top with sour cream and then cheddar cheese. Bake for 15 minutes at 350 degrees or until cheese is melted.

    Every single time we have a potluck party at work, I get requests to make that.  It's so good!

     
  • I was at a training and one of the guys there brought something that sounds like this salad in and I was in love with it. My coworker and I asked for the recipe and he stared at us like we were nuts and said "it's my wife's ugly dip."

    I'm going to make this sometime soon, because I'm almost positive it's what I tried and loved.
