It's Monday, yo! What's on the menu? Sunday I made a roasted veggie soup that I'll be having for lunch for the next few days.
Monday: homemade cheeseburgers with grilled asparagus
Tuesday: DH is in NYC for work so I think I'll just have something simple like grilled cheese or eggs.
Wednesday: pesto pork chops, couscous and veg tbd
Thursday: Pierogies, finally!
Friday: The kiddo is staying late at daycare so the hubs and I going on an early date.
Re: what's cooking?
Tonight we are having shrimp pad thai.
That's all I know so far!
We may go out to dinner on Friday if we can get a sitter.
Last night we went to my parents' house for my mom's bday dinner- a roast, mashed potatoes, corn, carrots, cake.
Tonight we are having a frozen pizza - I have a training for work that doesn't have a set end time (could go as late as 9pm, and I'm at least a half hour away), so that's that.
Tomorrow will probably be some sort of Hamburger Helper- just cuz I found another pound of ground beef I had stowed in the freezer that needs to be used before it kills us.
Wednesday I have to think up some sort of noodle or maybe I'll use one of the little frozen seafood things I picked up on sale last week- I just remembered it's Ash Wednesday so no meat allowed.
Thursday has kind of turned into pizza night with my boss at work...her DH can't have pizza (allergy to soy), so she likes to get it on Thursdays from a local place, and treats me and DH and DD
Friday will probably be the same as Wednesday- some sort of noodles or frozen seafood. I can't believe I forgot Lent was coming when I did that huge food shopping trip last week. Ugh.
Saturday is my friend's 30th bday celebration- waiting to hear if she wants to do dinner or just go for drinks.
I haven't given much thought to a meal plan this week, but um, holy veal cutlets! I picked up 1/2lb from the butcher on Saturday, and it was nearly $11. Are they always that pricey, or was I robbed?
I have no motivation for cooking today, whatsoever. I'm struggling with what to make tonight. Possibly pasta and garlic bread.
Tomorrow - stuffed peppers with corn
Wednesday - chicken korma with rice & naan
thursday - dinner out for vday with DH at Fond, hoping we are celebrating learning the sexes, we'll see!
Friday - homemade cheesesteaks
SJU- yes! veal is much pricier than chicken. I always want to get them instead but we go through 3lbs for dinner so it turns a comfort meal into a pricey one!
Sun- we hosted Sunday dinner, eye roast that came out amazing thanks to DH, mash, parmasean asparagus, corn. And I made a kick ass snickerdoodle cake I found on pinterest then added a brown sugar buttercream. amazing!
Mon- leftovers by request for the boys, soup for T3 since she is sick, salmon for DH and I
Tues- homemade cheeseburgers, roasted french fries, salad
Wed- grilled turkey london broil, a carb of sorts, and lemon roasted broccoli
thur- i am still working on a menu... T1 requested Jess's crockpot mac n cheese so I will definitely be making that just not sure what else. Maybe a nice cut of steak or something fancy..
ETA- for those on the edge of their seats.... crabcakes and mac n cheese per request of T1, nice mix eh?

Yesterday (for those who aren't friends with me on FB, where I already photo-bragged about this), I made banana bread, baked potato soup, and cookies. So I feel like I'm pretty tapped out.
Tonight: Beef shortrib (courtesy of Costco), mashed potatoes and asparagus
Tomorrow: Leftover potato soup
Wednesday: Spaghetti and meatballs
That's as far as I've gotten.
