H is away all week so I'm not really cooking. Just eating leftovers and using up random things in the pantry & freezer.
I am making a special dinner when H is home this weekend. Steak & pan seared scallops over parmesan risotto with asparagus. It should be really good, I'm looking forward to it!
I'll be making Shrimp scampi with pasta

I would recomend baking, or slow cooker in the future. I grew up on tough pork and hated it! But it you bake it longer or slow cook it, it will be so tender and fall apart! My favorite recepie I never make any more is just a can of cream of mushroom soup and pork and bake/slow cook it. It would go great with mashed potatoes!
When I was younger, a friend's mom taught me a great way to do pork chops. (I use fryin' magic now but you can use anything). I sear the pork chops, then put them in an egg wash and dip them in my breading and bake according to the directions on the box. They are super yummy and I also hate dry pork chops.
I am doing either pancakes or french toast for dinner. I love it!

Also, i've found a new twist on this.... brown the pork chops in a frying pan and put them in a casserole dish, mix together some chopped onion, some mushrooms, a can of mushroom soup, a cup of water (I think.. i can check when I get home if anyone is interested), a cup of UNCOOKED rice, and a some shredded cheese (I can't remember how much cheese.. hubby and I like cheese so we throw in a ton hah) mix that all together, pour it over the pork chops and bake in in the over for I want to say 45min at like 350 (again I can check when I get home if anyone is interested). Then you top it with french fried onions and a little more cheese and bake until the cheese melts (about 5 min)... it's sooo tasty!
As for me for supper... i'm bakin a pre-made lasagna.. i have yoga till 6:30.. and a time on my over
it should be done when I get home!

I also agree that a Shake 'n Bake/Oven Fry is a good way to go. Always had that growing up!
