This week is a colossal nightmare for me on so many levels. I tend to stress eat so I'm trying to meal plan and stick with it.
Sunday: beef stew in the crock
Monday: leftover stew
Tuesday: sesame chicken and quinoa fried "rice"
Wednesday: seared pork chops with asparagus and sweet potatoes
Thursday: pasta w/ meatballs
Friday: out with friends
Saturday: cheeseburger stromboli
Re: what's cooking?
Sunday (last night): Homemade pizza with pesto sauce, goat cheese and roasted red peppers
Tonight: either a ham steak or baked chicken with broccoli
Tomorrow: pasta with crabmeat in homemade red sauce
Rest of the week: ??
Yesterday- gravy with meatballs and raviolis, spinach salad
Mon- homemade cheesesteaks and baked fries
Tues- We have doc appts and hockey practice so it is a hectic night, going to prep this and cook at some point for everyone to eat when they can..

DH's schedule is all wonky this week, so we have meals planned but they are all quick (except one) and can be done any day.

I'm also going to totally plug for my family having our groceries delivered, we are saving a ton AND its forcing us to meal plan, whic we are terrible at doing!

Wednesday: Pasta toss with pork tenderloin, spinach, tomatoes
Thursday: No idea
Friday: Out to dinner
Monday - chicken piccata over angel hair
tuesday - leftover grilled sausage & peppers on rolls from Sunday, salad
wednesday - leftover chicken piccata
thursday - no idea, but hopefully something in the pantry or freezer
friday - out
Monday - pedialite ice pops. I have a nasty head cold and they tasted so good. This not being able to take meds is for the damn birds.
Tonight - left overs from going out to eat over the weekend.
Tomorrow - my mom made us a roasted chicken and mashed potatoes.
Thurs - probably more of the same.
Friday - whatever we can put in the microwave.
It's awesome not having a kitchen.
My little nuggets
Last night I made meatloaf and it was dry dry dry. I think not taking my pizza stone out of the oven (I keep it on the lower rack) screwed up the cooking time. On the other hand, my mashed potatoes were delish. We also had steamed sugar snap peas and corn.
Tonight is coconut crusted tilapia with a pineapple salsa, some rice and probably asparagus.
Tomorrow - BM dress shopping and out for apps/drinks
Thurs - refinancing after work, so either leftovers or something equally as easy.
Fri - pizza
