What's cooking?

My goal is to be super strict this week.  We are headed to the Philly Craft Beerfest this Saturday so I know I'm going to drink and eat like a slob.

Sunday: chicken marsala, couscous and brussel sprouts

Monday: pierogies

Tuesday: light chicken parm wrap/panini, peas, sides of ziti

Wednesday: crock pot roast

Thursday: some sort of leftovers

Friday: paninis or something

Saturday: out

    Monday: Swordfish & Linguini with Piccata sauce

    Tuesday & Wesnesday: Italian Sausage & Lentil Soup

    Thursday: Pulled Buffalo Chicken Sliders

    Friday: Stromboli or Pizza - not sure of the toppings

    Saturday: Order in, or hopefully go out!

  • Jess- I wanted to go to that but we are over booked this Saturday :(

    Sun- Since I burned a bajillion calories that morning, I needed a fat girl night, we had Five Guys and it was awesome

    Mon- "healthy" tacos with turkey meat and wheat tortillas, kids didn't notice and I felt less guilty

    Tues- linguini and clams, salad

    Wed- spice rubbed pork tenderloin, yams that I may make into "fries", and a veggie of sorts

    Thurs- chicken breast someway somehow..

    Fri- birthday party

    Sat- T1's confirmation along with a million other things, we are eating out after at my favorite BYOB with lots of wine

    Tuesday -  chicken, sweet potato, and roasted Brussels sprouts 

    wednesday - beef chili

  • Jewels - I'm assuming you figured something out with the chicken cutlets by now haha.  I had the same question on Monday and Dh reminded me that we have this amazing sundried tomato pesto sauce in the pantry from Wegman's.  So I seared the chicken, cut it up into chunks and cooked it the rest of the way in a half jar of the sauce and then tossed with some whole wheat penne and fresh spinach (wilted with the heat).  Top with a little grated Locatelli.  We also do this with shrimp on occasion.

    Mon and Tues - see above "recipe"

    Weds - spinach, fontina and roasted garlic chicken sausage, starch and veg TBD

    Thurs - either leftovers from Weds or salmon, sweet potato fries and sugar snap peas

    Fri - pizza night

  • Sunday night we just finished up leftovers to clear out some stuff from the fridge.

    Monday and Tuesday we ate pepper steak with mushrooms and rice.

    Tonight we are heating up some beef stew that DH made a couple of weeks ago and froze, and will make some biscuits.

    Tomorrow is pizza night with my boss.

    Friday we'll do flounder (I bought frozen portions- I generally don't like frozen seafood but got a good deal, so figured why not), with probably baked potatoes or sweet potato fries, and a veggie.

    Not sure about Saturday yet.

    Sunday we will be eating at MIL's (lucky us) for BIL's birthday.

  • I did good this week! 

    Sunday: home made pizza with wheat crust, mushrooms and peppers

    Monday: fish tacos

    Tuesday: corn chowder

    Wednesday: McDonalds nuggets - got home and smelled gas, so we had to call PECO and leave.

    Thursday: what we were supposed to have Wed: grilled chicken, mushroom ravioli, red sauce with spinach.

    Friday: airport food
