Since everyone seemed to want to see this more often we will start this week with it.
So what's on the menu for this week?
Also let's add if there are any special new things you are wanting to try.

H still away (although it's his last week of training!) So I'm still not cooking a lot. This week I'm making:
Quinoa Stuffed Squash: http://www.edibleperspective.com/home/2012/11/16/stuffed-delicata-squash-with-quinoa-stuffing.html
Eggplant & Tomato Sauce over Pasta: http://www.skinnytaste.com/2009/10/eggplant-and-tomato-sauce.html
Spicy Sausage, Sweet Potato & Lentil Stew: http://www.slenderkitchen.com/sunday-slow-cooker-sausage-sweet-potato-and-lentil-stew/
And then to satisfy my sweet tooth I've been nibbling on chocolate filled strawberries: http://www.snack-girl.com/snack/lightest-dessert-recipe/
I've been slacking on planning. Here our the options I just sent DH. We'll see if he agrees with them all. We are going out tonight and Friday is normally homemade pizza night, so I'm hoping he will keep 3 of them.

This week:
Monday: Chili
Tuesday: Beef Empanadas
Wed: Barbaocoa (probably butchered the spelling on that one)
Thurs: Bourboun Crack Chicken
Fri: Cajun Pasta
Sat: Crunchy Black Bean Tacos
Sun: Rigatoni (Veggie)
If anyone wants any of my recipes--just let me know. I don't always link things because some of them are my own recipes and I also make changes to things all the time.
New this week: Beef empandadas, barbacoa, bourbon crack chicken and crunchy black bean tacos. My in-laws bought me a dough press 2 weeks ago and I have been trying it out. I made baked turnover pies the other day and now empandadas. Fun stuff!
We're definitely doing leftovers for a couple of days- We have roasted acorn squash, romanesco au gratin, homemade chicken soup, stuff to make ruebens, and a sausage/ kale/ pasta thing that all need to be eaten up.
Once we get through that, I was going to make salmon w/ crispy mashed potato cakes and a black bean & mushroom chili
Let me know hwo the sesame honey chicken is! I have that on my list of possible foods for next week!

H and I are back to our soup/salad routine that worked wonders for us prior to the wedding, so.....
Monday: Chili
Tuesday: Split Pea
Wednesday: Minestrone
Thursday: Ham & Bean
Friday:
I made a tomato bisque soup last week, that quite frankly was awful. We had to choke it down so I'm headed back to my basics this week!
