Cooking Club RETURNS! 3/5/13

Today's theme - No Heat Required (no cook meals)

So what are your ideas when you just don't want to cook??? Or, for example, if you don't have power haha!

And yes, you can include things you maybe prep ahead so you can just have them on hand in the fridge, etc.

let's hear it ladies!

  • Remember - a rotisserie chicken from the grocery store is your best friend for a no cook meal too! 

    Easy favorites are: 

    Salad --- chop up some greens and veggies, throw in a can of tuna if you want to keep it totally no-cook, maybe some chick peas. YUM. 

    Sandwiches - get creative! I will permit a toaster for 'cooking' here but pile a sandwich high! Look at those leftovers in the fridge and you just might be able to come up with a creative and tasty dinner!

  • Like Michele, I do a lot of salads. Ingredients change all the time, including: romaine, spinach, broccoli slaw, cauliflower, tomatoes, peppers, cucumbers, carrots, chickpeas, edamame, olives, cheese, apples, strawberries, craisins, raisins, nuts...

    I almost always have a package of imitation crab meat in my fridge for when I'm feeling lazy. Add a little dressing, and instant seafood salad. Make a sandwich with it, or on top of a salad. Easy peasy.

    We like tuna with roasted red peppers (I always have a jar or two on hand in my pantry) and horseradish. It's a bit different than your usual mayo-laden tuna salad, but it works. Again, great in a sandwich, or on a salad, with or without additional dressing.

    Pita bread + hummus + tabouleh 

    I hard boil 6-8 eggs at a time and keep them on hand. My kids love them, so if they're not interested in whatever protein we may be having, I can just reach into the fridge and grab an egg for them.

    Leftovers! I make more pasta and rice than we will eat in one sitting so I can have leftovers to work into a quick meal later in the week. Add a little Italian dressing or oil & vinegar, some diced veggies, and a protein, and it's a complete meal.

    Rotisserie chicken is a go-to when I want something that tastes like homemade, but don't have the time or desire to cook it myself! And, it makes for yummy leftovers too!

    And, that slideshow reminds me that I have some wheat berries to cook up! I make a batch, keep them in my fridge, and then add to meals, either sprinkling as a topping (in oatmeal, on salads, etc.), or using in place of more refined starches (like pasta).

    One of my favorite salad ingredients lately is avocado slices, especially with this honey lime salad dressing:

    Honey-lime salad dressing: vigorously beat/shake 1/4 cup olive oil, 1/8 cup honey, juice of 1 lime, zest of 1 lime, and 1/4 tsp nutmeg until it is combined. 

    It's also really good with teriyaki salmon on top. Truthfully best if it's hot, but it's pretty good leftover too. 

     

    Chicken salad made with canned chicken is an easy no-cook meal. Just be sure to add lots of spices because the chicken is super bland.

     

    Tex Mex dip: layer
    Refried beans
    Guacamole
    1/2c sour cream,1/4c mayo, 1/2 package of taco seasoning mixed
    Cheddar cheese
    Chopped onion
    Chopped scallion
    Chopped jalapenos
    Chopped tomatoes

    and eat with tortilla chips!
