Dinner help

I need QUICK and relatively HEALTHY dinner ideas for a non-foodie who can burn water and regularly uses the smoke alarm as the recipe timer.

Ive always struggled with dinner ideas that Im capable of, but my panic is reaching a fevered pitch at the moment since I dont get home from work until 5pm(ish) and the baby goes to bed at 6pm so I have one solid hour to make and eat and clean up dinner among other things.

DH can get dinner started but he's only home about 20 minutes before me so he cant get too much of a head start. 

What are your go to easy and quick (non-crock pot) meals? Bonus points if they please a toddler.

  • I'm a huge, huge fan of quinoa!  It's fast, filling and bland enough that you can just throw stuff into it to flavor it up to suit your tastes.  I realize that's not exactly a "recipe" but I tend to just cook some of it and throw in some veggies
  • Can you pre-make some dinners?  Maybe some casserole type stuff.  Your husband can pop it in the oven when he gets home, and you could probably be sitting down by 5:30 with a full meal for the family.

  • Our quickest and easiest dinners are tacos, shrimp pad thai, penne with chicken or shrimp and homemade pesto (kept in ice cubes in the freezer), clams and linguine, stir fry, meat/veggie skewers and anything I prep in advance.  Don't know how pick

  • We also do stews, chili, or pasta sauce on weekends and freeze at least 1 portion..then eat that during the week. Then all you need to do is cook rice or pasta. Your DH could start defrosting/boiling water. We have an electric kettle and that has cut down

  • I think your best plan will be making a menu for the week so you have everything planned for dinners.  Baked ziti, lasagna, shepherds pie, enchiladas, and other casserole type dishes are easy to double so you can make a pan for that nights dinner
