My one and only baby brother is graduating high school next month. 
We are working on planning the open house & working on a menu. What kind of suggestions do you have for open house type food ideas.. that wouldn't be too expensive?
I thought about a party tray of subs, but those add up fast!

Here's what I would probably do for an open house:
I'm trying to think of what else I would do and am drawing a blank!

My niece graduated last year, and she had meatball sandwiches at her open house. My mom made a ton of meatballs and then they just bought small hoagie buns and cheese. They kept the meatballs in a slow cooker in a marinara-type sauce and people could put them on the bun with cheese. Other ideas? Tacos? Hot dogs?
Side dishes -- fresh fruit, potato salad, fresh veggie tray or veggie pizza? Otherwise, scour Pinterest and see what you can find.
Trays:
crackers
sausage/ deli meats
cheese
vegies
fruit
pickles/ olives
Along with:
dips/ spreads
cake
chocolates/ candy
That's our standard/ basic spread for parties and gatherings
My mom and I made all the food when I graduated college and my sister graduated HS we probably had around 150-200 people stop by...
We made something like 10 boxes of pasta salad using plain tri-colored noodles then adding dressing to it. Also I we got a bunch of small buns and made our own sandwiches, way cheaper than buying them pre-made. Also bought a lot of carrots, broccoli etc and just made our own veggie trays. I think we also got some fruit and cut that up too.
But the best idea was from a friend of ours, you take a table nail some 2x4's along the top of the table cover it with a large plastic liner then dump ice in it and then you can set the food bowls and trays on the ice and it will stay cold the whole party. That table has now become the traveling graduation or holiday party table.
My cousin had a Taco Bar at her graduation last year. This could also easily be a nacho bar! They used one of those 3 section crockpots and put the cheese and meat in there. Toppings can be kept on ice off to the side.
