Re: Mixup Monday
Ok, my menu is non-existent. We live on the 9th floor (top) of our apartment building... yes, it is warm outside but our apartment has been unbearable! The AC is going almost non-stop and it is only set to 75. Poor H is miserable and I am not so happy myself. I am sure part of it is that they don't have anything running in the hallway so, as soon as we open the door, the cool air escapes and the hot air creeps in no matter what we do. So I am terrified to use the oven. I haven't even been able to use my BRAND NEW STAND MIXER because I don't want to run the oven more than I have to.
Any ideas? Please keep in mind that H is a total meat eater. I would totally be ok with like a gazpacho but H wouldn't even consider it.
Mailyn- If you have a crockpot I would use that. You could do a roast, chicken, beef tips, almost anything you can think of. Also H and I cook meat in the skillet a lot like chicken or even fajitas or homemade tacos. Usually when it gets warm outside I do a lot of dishes like chicken and rice or tacos stuff that is quick and I just have to use the stove for.
This week I'm not sure on a menu I know we are have French Toast for dinner since I am craving it. And then we may do chicken and rice and sloppy joes. We have a lot leftover from the gender reveal this weekend so I am going to try and use the leftovers.
Mailyn - I feel your pain! We have the same problem in our apartment once it gets warm! I definitely recommend your slow cooker, it's a lifesaver! Also, if you can, grilling outside.
Another idea is rotisserie chickens from your grocery store, and see if there's a day of the week they sell them for less. Ours sells them for $5 on Fridays. We usually get at least 2 meals for 2 people out of them.

Mailyn - do you have a toaster oven? Those things are AWESOME. You can use them just like a regular oven, except no need to pre-heat because they're so small and they don't heat up the kitchen like a regular oven! You can even find smaller sized baking pans/muffin tins/etc that'll fit inside most toaster ovens.
