keldel - mac and cheese

I don't know if I have your email so I'm posting the mac and cheese I threw together last night here.  I go off of the baked mac and cheese from the old classic, the Better Homes and Gardens cookbook.  For some idiotic reason, I doubled the recipe below so I have 10 tons of leftovers, but I also only have a family of 3 :)

8oz elbow macaroni
2tbsp butter
2tbsp flour
1/8 tsp black pepper
2.5 cups milk
2 cups mac and cheese blend cheese (New York Sharp Cheddar, American and Swiss Cheeses)
1 cup smoked gouda
panko/Italian seasoned bread crumbs to top

1. Preheat oven to 350*. Boil pasta according to package directions.  Drain and set aside.

2. Melt butter over medium heat in saucepan.  Whisk in flour and pepper. 

3. Pour in milk all at once.  Heat until mixture begins to get thick and bubbly.

4. Stir in handfuls of cheese in batches until mixed in and creamy.  Combine with cooked pasta.

5. Pour into casserole dish and bake for 30 minutes.  During last 10 or so minutes, sprinkle with breadcrumbs.

    I have never seen the mac and cheese blend at my store but I am sure there is some variation of it. T1 loves baked mac n cheese, I am going to make this for him next week
