Okay, so you know I"m planning this big surprise party for N's birthday. I'm trying not to post too many things about it- but you girls are awesome.
I'm doing a taco bar with 4 different types of meats. I am pretty much copying Chipoltle's catering menu. I'm doing a salsa bar. I'm doing some bean and rice sides.
What other food should I have around- like for before dinner? I don't want to overdo the mexican food theme, but I don't want to do random foods that don't seem to fit.
Also, I'm having beer, Sangria, Frozen Margeritas, and tequila. How much beer should I get? I'm planning on 60 people to be safe.

I love your idea!! That sounds really yummy.
For food just before dinner, I would probably do the normal stuff - chips and dip, veggie tray, fruit tray, etc.
As far as how much beer, I don't know. It depends on which day of the week the party is and if the people you invited are big drinkers.
Great party theme! I would definitely have some guacamole out beforehand....but then again I could eat guacamole everyday. I'm now craving Mexicn just fom reading this post.
Id probably get 3 30 packs if it were me....and then just have stuff left....but I tend to overplan and we always have a bunch of beer in the house so having extras wouldn't be that big of a deal. Or have you thought about a keg? That also depends on day of week and how many beer drinkers you are having.
I don't think a keg would be unclassy just get clear cups instead of red solo cups! and kind of hide the keg behind a table if possible.

I love your food theme! you could do a warm queso dip in the crockpot as an app..I'll keep thinking

How about bufflao chicken dip? I know you can use salsa in Tastefully Simple's beer bread recipe.

I am off starting that week, so each day I'll do a main dish in the crock pot to freeze for Saturday- he will never notice food in the downstairs freezer. That Friday night is 'guys night' planned by his BFF (obviously to get him out of my way) and then he won't be back until 5pm on Saturday for the party, so I'll have some time for side dishes. I also have friends helping!
Me too! And it's seeming pretty easy to make food for...and the decorations weren't hard either. I'm getting super excited to pull this off!
