Hey ladies - I'm trying to eat healthier, and wanted to give quinoa a shot. Can any of you recommend a tired & true recipe? Or perhaps a brand, or anything else I might need to know? Thanks,
Re: Recipe Request - Quinoa
2cups chicken stock, 1cup qquinoa this makes fluffy and flavorful quinoa, we use it a s a substitute for rice, for everything, but especially stir fry. It reheats nicely too.
We just eat quinoa plain with everything w/ eggs/ chicken/ veggies etc? It's 1 cup quinoa to 2 cups liquid we just use water. Some use chicken stock.
We buy from the bulk section at whole foods.

I gotta update this blog again.
We have this probably twice a month, we like it so much. And it makes A LOT and reheats well for lunches.

My favorites: quinoa "mac" and cheese
quinoa Mexican style
quinoa "fried" rice
Wait! I made these (link) a couple of weeks ago and we LOVED them! I did make a couple of substitutions though, specifically I swapped out cottage cheese in favor of cream cheese, used FAR more carrot than called for and omitted the onions all together. I have to make these again with different veggies in there!
You guys rock! I'm going to dig around these links and try to find something that'll go with pork tenderloin tonight and hopefully lunch for tomorrow.
Thanks again.
