Potluck, need help with ideas.
We're doing a potluck for a coworker's bridal shower this week. I just looked at the sign up sheet and people seem to have picked a lot of sides and appetizers. Looks like we'll be short on a main dish. Any cheap ideas? It seems like for work potlucks, I end up doing the main dishes a lot, because no one else will. I just don't feel like putting a bunch of money into it this time. Any suggestions are helpful, but I really like the simplicity of a crockpot.

I always love a good bowl of chili...not sure how that would work for your event.

Chilis or stews are certainly good for a potluck. I also make taco chicken in the crockpot a lot in the summer to make tacos or lettuce wraps with, but I don't know if those would go with what you're looking for. A lasagna also works, and I know lots of people have made lasagnas in the crockpot, but I've never tried. This one seems like it would be pretty simple, but I'm sure Pinterest has a billion others:

Pulled pork or pulled Chicken in the crock pot is simple. Either use bbq sauce or a
powder sauce kit with water if you want more of a kick to it.Then just take a fork and pull apart when it's done approx 4 hours later.
I was thinking pulled pork too. If you like buffalo flavor, I have made this recipe before. Its basically a pulled buffalo chicken. I top it with blue cheese dressing and chopped celery. http://www.emilybites.com/2012/07/slow-cooker-buffalo-chicken.html
