what's cooking?

I'm trying to get back in the swing of things

Monday: our easy standby to make sure the kid eats. ham steak, peas and sweet potatoes

Tuesday: DH's birthday.  I asked him what he wants me to make for him, but he hasn't gotten back to me yet.  My back up is a tri tip steak we have still frozen from our winter CSA meat share, asparagus and some red potatoes, all on the grill.

Wednesday: chicken cordon bleu, more asparagus and some roasted beets.

Thursday: DH has softball so I'll probably have some form of leftovers and make the kiddo some ravioli and veggies

Friday: I want to give risotto a shot!  I'm thinking zucchini, red pepper, maybe mushrooms, kind of an "everything but the kitchen sink" sort of deal.

Saturday: I am making DH get burgers from somewhere lol.  I've been wanting a good burger for ages.

Sunday: tbd

    This week in no particular order we are having:

    -fried eggplant layered with fresh tomatoes, fresh mozzerella and basil and baked until bubbly (I don't have the energy to pull together a full eggplant parm)

    -chicken stir fry

    -marinated pork chops with rice and some sort of veggie

    -turkey burgers with french fries (and hopefully something nutritional for the munchkin)

  • This week is Operation: Fridge/Freezer cleanout.  We are headed on vacation at the end of week so I want to use up what we have.

    Tonight - spinach/feta chicken sausage, leftover veggies and potato salad

    Tues - pork tenderloin, sweet potato fries, green veg tbd

    Weds - salmon, sides tbd

    Thurs -leftovers

  • I only have a few days planned...

     Tonight: sausage, broccoli rabe, garlic, oil over orichette pasta

     Tues: pork chops on the grill, greek salad

    Wed: chicken skewers w/ cauliflower, squash, zucchini, onion, peppers on the grill (w/ a curry marinade)

  • Monday - Shredded salsa chicken tacos; might blow off the p90x and make tortillas and Mexican cocktails Wink

    Tuesday - Leftover tacos

    Wednesday - Maybe Media's dining under the stars

    Thursday - Sausage & Rabe with pasta (thanks for that idea eSyn!)

    Friday - Pistachio Goat Cheese Pizza with Honey

    Saturday - Out for a birthday party

  • Sun- Chinese take out

    Mon- chik fil a since we are on the road for hockey

    Tues- whole roasted chicken, potatoes, spinach

    Wed- grilled burgers, homemade fries, salad

    Thurs- grilled steak of sorts, zucchini and brown rice

    Fri-Sun- shore bound

  • For those discussing risotto - this is my favorite risotto recipe, uses barley instead of rice: http://smittenkitchen.com/blog/2010/01/barley-risotto-with-beans-and-greens/. I usually make it with peas and roasted red peppers.

  • Monday- I was on my own, so I had a turkey and cheese sandwich. He ate at the shore.

     

    Tuesday- We are either going out or we will have chicken, stuffing and a vegetable.

    Wednesday- I am going out with my sister. He will probably order out or go to his mom's house.

     Thursday- Note the Tuesday. If we go out, then we will have the chicken or vice versa.

    Friday- At the shore- We will probably just get pizza

    Saturday- Grill some steaks

    Sunday- Eat out at a fun place on the bay with some live music and beers.

  • Thanks for the risotto recipes everyone!  I'm filing them away.  I'm going to attempt this one since I have most of the ingredients on hand.  I will be omitting the saffron because I'm not buying that ish!  :)
