As you all know, DH and I are vegetarians. When we have a potluck anywhere, we usually make ourselves a main dish, or we'll just eat side items. That's cool and all, but I enjoy a bit of protein in my diet. So I want DH to make this awesome risotto with Quorn chick'n tenders and peas for us, and then bring something else for everyone. My thought is that anyone who is brave enough (a few members of my family fear fake meat) can try our risotto because we'll bring enough to share. Then I thought about either making biscuits or some sort of vegetable.
What other thing should I bring? Anyone have a tried and true awesome vegetable recipes? Just go with the biscuits?
ETA: Should we just make half the risotto with no fake chicken and save ourselves a bit of hassle?

I *loved* these asparagus parmesean puffs, if you want an appetizer. You could make them ahead and pop them in the oven for 15 minutes when it's time to eat.

I always bring a side that's substantial enough to be my entire meal. ?It doesn't have to have protein necessarily, especially if you plan ahead and have protein at lunch. ?
This is one of my favorite meals for non-vegs. ?They don't even know it has tofu in it. ?I make some mods to the recipe, but the overall effect is similar. ?Plus, it's red + green! ?Could you get any better for xmas?

Do you guys eat shrimp? ?Or would you be opposed to it sharing a dish, and you picked around it? ?B/c if you're willing to have shrimp, then this is a staple in my household and is a big hit at parties.

We don't do shrimp (we both hated it before we went veggie), so eating around it wouldn't work either.
The dip looks easy to vegetarianize, though. Yum!
