Meal Plans

I'm going grocery shopping and trying to stay on a tight budget. My hours got cut at work... it's not pretty, I can't wait for school to start so they're back to normal. I've been scanning my pinterest, but nothing is catching my eye and I'm so tired of the same stuff every week.

So far I have:

Sat/Sun - Probably too busy to eat at home

Monday - Enchilada Pasta Bake w/ Salad

Thursday/Friday/Saturday - Boston! I'm packing snacks and lunch stuff for the drives Thursday and Saturday. It's 6 hours... and I'm not feeling spending money at a rest stop. Luckily our hotel has a fridge in the room.

Sunday - Fend for yourself.  

  Monday - Summer Pizza (I'm hoping I can trick H into eating it... he hates cream cheese... what he doesn't know won't hurt him.)

  • We don't plan meals, but we need to start. Do you have a place that you like to go for cheap, easy recipes? I would like to get into the habit of this before LO comes.

    I use Pinterest a lot and I make a lot from scratch. If I find something we like I'll double it and freeze it. All the recipes I posted we'll feed us for lunch the next day and possibly dinner! I have a few cookbooks from Rachel Ray and Sandra Lee that I get some ideas from. It's not always easy to cook from scratch, but it's so much cheaper.

    I buy store brands, luckily we have a Wegman's grocery store and their store brands are amazing.  I live close enough to farms that I get a lot of summer produce at markets and I stock up on spices at Amish markets when I'm at my mom's.

    I choose recipes to make during the week but don't assign specific days to them. I've gotten more thoughtful about planning around sales since I am SAH for the next year.

    I love skinnytaste.com and emilybites.com for recipe ideas in addition to Pinterest. They are both WW blogs but so satisfying.

    I typically do breakfast for dinner once a week and at least 1-2 vegetarian meals weekly. I am a huge fan of one pot meals so I don't have to worry about timing things.

    I LOVEEEEE wegmans! :) Do you have an iphone? Their app is amazing.

    I use pinterest to plan meals. I then type them out for MTWThF. I use the wegmans app to input the ingredients. The app then lists them by aisle. You can also check prices via the app so you know if generic, name brand, etc is cheaper.

    Since about 34 weeks. I have been making double the amounts and freezing half of many of the meals. Surprisingly,  this hasn't cost much more! Buying in bulk is saving us money...which is a relief because I decided to take a very part time job and am nervous about our big change in salary.
