I like quick, it seems to be the new norm around here!
For super easy, throw a bone in pork shoulder in a crockpot after rubbing with salt and add 1 tbsp or so of liquid smoke. Cook on high for 6-8 hrs or low for 12 + hrs. Then I serve this either with rice, macaroni salad and Hawaiian rolls or you can add BBQ and make a pulled pork sandwich. It also works well as a filling for tacos. Basically it can provide lots of different meals throughout the week easily while not feeling like yours eating leftovers day after day.
I also love making Chicago style Italian beef sandwiches in the crockpot. Add a beef roast to crockpot along with broth, Italian seasoning, garlic, and giardiniera. Cook on low for 12 hrs or so. Shred and put on rolls with provolone. Dip the sandwich in broth or ladle some on top. Put more giardiniera on top of the sandwich.
Chili is also always a hit here. And if you make big batches you can freeze some and have an easy go to meal another time.

Im getting my haircut Wednesday and so I don't want to cook.
Parmasean crusted halibut and some kind of side.
Turkey burgers, avocado, baked beans and corn on the cob.
All these meals take about 30-40 minutes from start to finish.
