Spinach recipes

I only really like that frozen creamed spinach, but I want spinach tonight with dinner, and not the frozen kind.  How do you guys make your spinach?

My mom makes a spinach and strawberry salad, but I'm not in the mood for that.  I really need to expand my vegetable pallet, I only eat broccoli and string beans.

  • I like to add fresh baby spinach leaves to a bunch of things. Soups and pasta dishes are a great way to incorporate spinach. When I don't know what to make for dinner, a quick recipe (seriously, 15 minutes!) is to make some pasta with lemon oil and spinach:

    Cook the pasta (remember to reserve about a cup of the pasta cooking water)

    In another pan combine olive oil and garlic.

    Let the garlic saute a bit and add the zest and juice of 1 lemon

    Season with salt and pepper 

    I like to add some shrimp at this point, but DH doesn't always like shrimp so you can certainly make it without. 

    When pasta is finished cooking, drain (but remember to save about a cup of pasta water before you dump it all!)

    Put the cooked pasta in the pan with the lemon sauce and make sure the sauce is well incorporated throughout the pasta.

    Add the baby spinach (a few big handfuls)

    Add the pasta water to the desired consistency of your sauce. Pouring the hot pasta water over the spinach will help it to wilt slightly.

    Serve and enjoy!

  • Both recipes sound delicious!  Now I have no clue what to make for dinner, but I have 2 new recipes in my rotation.  Thanks!!
  • I add spinach to our pastas as well.  H isn't a big veggie eater either, so I have to "hide" it.  Spaghetti and baked ziti are our go tos, I just add the sauce to a pot with the sauce and throw the spinach in.

    I also make spinach and eggs when I need to get rid it a big bag (that's all I can usually find at the store).  I like putting it in the toaster oven and it gets crunchy.

    And I made green smoothies!  I use Spinach and/or kale.

    My go to is: 1 apple, 1 banana, greek plain yogurt, ice a bit of water to help blend, and as much green my cup can hold.  It makes two.

  • I've never been a smoothie fan, but I will give this a shot.  My blender is currently at my grandmother's with the rest of my cool kitchen stuff, but if we ever get a house, it's on my list to make.

     

    I was going to make the flautas tonight, but then my mom called and said she is making veal parm.  That trumps all.  I have all of the ingredients though because I already went to the store, so those are on the menu tomorrow.  Nic, your pasta is on for Thursday or Friday.  Thanks for the suggestions ladies :)
