  • I still dont have my kitchen put together and a frat brother of DH's is in town for the weekend so he is hanging with him this afternoon but if I did have a stove or even a working kitchen I would make Chicken Fajitas....I have been craving em!

  • Steve is sick, so we did soup and english muffins.
  • I had a frozen pizza and DH had a chicken sandwich...I didn't cook last night as you can see.  We had leftover BBQ from supper Saturday night for lunch yesterday, so neither one of us were that hungry!  I think tonight will be broiled tilapia parmesan...yum-o!
  • I made an easy jerk chicken and jasmin rice with string beans.

    The recipe for the jerk chicken is

    3 tablespoons of low fat mayo

    3 tablespoons of jerk seasonings ( you can buy from your local grocery store in season aisle)

    3 tablespoons of soy sauce

     

    Mix all ingredients together. Place chicken in sauce. Make sure to coat both sides of chicken well.  Sit in fridge for about half an hour.  Take out and grill or broil. 

    I fix ours on the George Forman grill we got from the wedding.
