some easy to make yummy dinner recipes (stuff for during the week while i'm working)????  if so can you share?  either here or email me at

  • During the week, I don't really cook with recipes. I just throw together whatever sounds good.

    Last night I made salmon with sauteed veggies and it took about 25-30min.

    Heat your oven to 375 degrees. Put salmon fillets in an oven-safe dish, drizzle with olive oil (I used about 1-2 teaspoons), and squeeze about 1/2 a lemon over them. Season with black pepper and salt.

    Bake in the oven for about 15 min.

    Meanwhile, cut up some red bell peppers, mushrooms, and onion. Heat a frying pan with a pat of butter. Once the butter is melted, throw in all the veggies and saute for about 7-10 min (until the onions are kind of translucent). Season with pepper. I also squeeze some lemon juice on the veggies while they cook.

    Once the salmon is done, I garnished with some torn up basil and a little more lemon juice (I like the tartness....totally up to personal taste). Plate and eat. Super easy! :)

    I have a really good chicken and rice recipe that I will have to find. It is another quick and easy one.

     

  • This is one of my fav easy one dish meals. It does take longer though....about an hour to cook. 

    ONE DISH SPANISH RICE AND CHICKEN

    4 to 6 chicken pieces (breasts, thighs, legs,or a combination)

    1 ? cup uncooked rice

    Black pepper and garlic salt to taste

    1 cup salsa

    1 7 oz. can salsa verde

    ? cup chopped onion

    2 cups chicken broth (from bouillon or canned) brought to a boil

    ? cup chopped green pepper

    ? cup each shredded Jack cheese and cheddar cheese

     

    Preheat oven to 350d. Rinse the chicken and pat dry. Place the rice in a 13 x 9 pan and pour the hot chicken stock over. Top with the chicken and sprinkle with garlic salt and pepper. Using a small bowl combine the salsa, salsa verde, onion and green pepper, then pour over the chicken.  Cover with foil and bake for 55 minutes. Uncover and sprinkle with both cheeses.  Place in oven until cheeses melt ? about 5 more minutes.

  • okay, one more "non-recipe" for you.

    My husband and I love homemade turkey burgers. I buy the 1lb package of ground turkey and mix a little salt, black pepper, a bit of caynne pepper into it. I also chop up whatever veggies are in the fridge and mix them into the meat. Last time it was tomatos, jalepanos and cilantro. I have used mushrooms, zuccini, those small yellow squashes....really whatever veggies you want. The good thing is, if you are like my husband and I, and aren't really a fan of veggies, this is a good way to incorporate them into your diet without feeling like you are eating veggies. Also, they help keep the meat moist.

    Sometimes I add a tablespoon of plain yogurt to the meat mixture to help keep the burgers moist as well. You can't taste the yogurt at all, but the burgers are so juicy!

    Form the patties to whatever size you prefer and then cook on your Foreman grill, a grill pan, or on your BBQ.

  • The second one is perfect!  :-)  i like those type of recipes its easy!  That is the biggest part..not a whole lot of prep! :-)  the cook time is good too... :-) Thanks!
  • These are some that we use some are plain and nothing too extravagant.

    Lemon Pepper Chicken

    4 Chicken Breast (I use boneless skinless), Lemon Juice and Pepper.  Throw everything in a large baggie to marinate for 30 minutes, heat the oven to 375, put it all in a baking pan, and cook for 45 min to an hour.  I usually serve with rice and broccoli.

    Crockpot Roast

    1 roast, 1 can of cream of mushroom soup, 1 package of Lipton Onion Soup Mix.  I usually mix the cream of mushroom and onion soup mix in the crockpot with water add the roast then add more water to cover the roast.  I get home and cut up about 4 potatoes into cubes, add some carrots and let it cook on high for 30 minutes.  Then serve.  We usually buy some French bread too

    Stir Fry

    1 head of bok choy (i don't know if you call it that like lettuce but it's better than saying 1 thing of bok choy), snow peas, sliced water chesnuts, 2 whole zuchinnis, mushrooms, bean sprouts, chicken (if you want to add that) and water flavor stir fry sauce (we usually use the spicy sezchuan (sp?)  Brown chicken in about 2 tblsp. olive oil, then remove don't fully cook, add all vegetables and cover for about 5 minutes, add chicken back cover and cook on medium for about 10-15 min add stir fry sauce and cook for another 10 minutes.  Serve with white rice.

     

     

  • I'm glad I can help! Smile If I think of anymore easy recipes like that, I will post. I know what you mean about prep work...I always destroy my kitchen prepping, leaving things everywhere. Plus the extra time it takes. Do you have a crock pot? That makes cooking even easier.

  • This is one of my easy ones and H LOVES it.

    Ingredients:
    Chicken breasts
    Shake-n-Bake original
    Pesto
    Motzerella Cheese

    Coat the chicken with the shake-n-bake, bake in oven @350 (I do 400 because my oven is weird) for about 25 min, take chicken out, top with pesto, sprinkle cheese, bake for another 5 min until cheese is melted.

    I usually serve with rice and veggies.

     Another easy one:

    Poor some Italian Dressing in a pan (I do enough to coat the pan, you can add more or less. I'll throw in some minced garlic too, you can add olive oil, but I found I don't really need it with the dressing)
    Add chicken, sprinkle with basil and pepper (or whatever herbs you think might work)
    Cook Chiken breast until done (about 10 min)
    Add veggies of your choice and cook for another 5 min or so until veggies are tender and coated in sauce, spinkle with parmesan cheese.

    You can serve with rice or over pasta. I like this one because you can change it up depending on what you have a available.
