Potato-Poblano Chowder
In a large saucepan, cook the bacon until crisp (or melt the butter, if using instead of bacon). Remove the bacon and set aside. Saut? the onion in the bacon fat (or butter) until softened, 3-4 minutes. Add the garlic and saut? until fragrant, another minute or two. Add the potato cubes and stock and bring to a boil. Reduce heat and simmer until potatoes are tender, about 20 minutes. Add the chopped poblanos, and simmer 5 minutes. Puree the soup with an immersion blender (or cool, and puree with blender, food processor or food mill). Re-warm, if necessary, then stir in cheese, if using. (It is important not to subject the cheese to too much direct heat, or it will separate and become oily. Use the heat of the soup to melt the cheese). Season to taste with salt and pepper. Crumble bacon, if using, and sprinkle over soup.
Note: To roast the peppers, place them over a gas burner, or under the broiler, or on a charcoal or gas grill until the skin is completely blackened. Cool and scrape the charred skin off. Remove the seeds and membrane and coarsely chop.
