I have been struggling with 'good' dinner recipies. I'm looking for good, easy, and healthy dinners. Suggestions?

I know I am a bit late with this but I have found some great recipes on the food network that are simple, healthy and really good (I am a complete food network junkie). A few that are my fav's that I make often are:

This is the best chicken dish I have ever made. It's like chicken marsala but so much better. Not healthy at all but excellant for one of those days you just don't care. my fav meal which is good and pretty easy is lemon tarragon chicken. I will try to find the real recipe but here is what I do. It is my fail safe meal I make for people when a baby is born and if I have unexpected company. The kids I nanny for make me cook it every week.
1. Heat olive oil in a pan
2. Dredge bite sized pieces of chicken in flour and fry in oil until golden. Set chicken aside and turn heat down on the oil.
3. Add 2 tbs of butter to the oil
4. When the butter is melted add 1 c water, 1 chicken boulion cube, 1-2 tbs of tarragon and 1/8 c of lemon juice. Simmer until reduced so that when you drag a spoon across the bottom of the pan the sauce is slow to fill in the space but still is runny
5. Add the chicken back in and simmer for a few min. to combine tastes
6. Serve over rice
