Zucchini Carrot Walnut Raisin Bread...
2 cups of all purpose flour
1 teaspoon nutmeg
1/2 teaspoon ground cloves
1 teaspoon baking soda
1/2 teaspoon baking power
1/2 salt
3/4 cup granulated sugar
3/4 cup of brown sugar (i used light brown)
1 teaspoon of vanilla extract
3 large eggs
3/4 cup of apple sauce/raisins/walnuts
1 1/2 cups of carrot/zucchini
preheat oven to 350
mix flour, spices, salt, baking powder & baking soda
in a seperate larger bowl beat eggs, sugars, apple sauce & vanilla, mix in the carrots and zucchini, stir in dry ingredeiants and lastly the walnuts and raisins...
the directions say bake for 55 mins the first batch i baked for that long came out super dry and not as yummy, so the next time i made them i started to check them at 20 min and by then the toothpick came out nice and clean so that's all i baked them for 20 mins.
i also topped them w/powdered sugar but somehow was not visable...
