Last minute holiday cooking/baking...
I have two presents to "make" in addition to my responsibilities for Xmas Eve. I'll be bringing baked haddock and my xmas eve cheesecake for the holiday, but I'm also doing a lot of baking that needs to be ready Xmas Eve morning. We're dropping a basket off with DH's boss and also bringing one as a present. I'm making spiced pecans, zucchini bread, oreo truffles, a regular loaf of bread from my breadmaker and a jar of jam, seasoned popcorn, and brownies.
Needless to say, I'm starting tonight. What are you doing for last minute holiday prep?

I'm doing fudge - chocolate walnut and chocolate peppermint.
I was going to do peppermint bark, but I am being a big chicken.
I just finished wrapping up English toffee and turtle candies for my co-worker gifts, and now I need to do another batch of each to bring with me to Ken's family Christmas... I got into the good graces of my extended-family-in-law by bribing them with chocolate treats, and if I don't show up with my traditional toffee and turtles on Christmas Day, I will probably not be allowed into his aunt's house!
Yesterday I felt like Willy Wonka with my entire kitchen covered in chocolate and caramel!
I've got a super easy fudge recipe.....
1 12 oz bag of semi-sweet choc chips
1 Cup of sweetened condensed milk
1 tsp. vanilla
melt the choc chips and sc milk
once melted add vanilla
transfer to a greased or foil lined pan and chill in the fridge for 2-4 hours or until you can cut it w/ a knife.
Wicked easy and wicked good!! I took some to work today and EVERYONE kept telling me it was excellent. It only took me about 15min!
Holy crap Heather you are making me look bad! I am only making cranberry pie and pretzel/rolo/pecan turtles tonight.

Sure thing!
Feta Artichoke Dip (makes 2 cups)
Oven: 350 Time: 20-25 min.
1 can artichoke hearts, drained and chopped (14 oz)
1 pkg (8oz) Feta cheese
1 c mayo (or miracle whip)
1/2 c parmesan cheese
1 jar (2oz) diced pimentos, drained
1 clove garlic, minced (I just use 1/2 to a 1/4 tbls and add a dash of garlic powder)
1. Mix all ingredients
2. Spoon into a 9" pie plate or 3c baking dish
3. Can be made the night ahead and refrigerated before baking - also tastes good cold, or you can bake it and re-heat in the microwave (not in the pie plate)...use crackers or other dippers

Well, I usually do them completely from scratch with a soft oatmeal cookie recipe that I have somewhere, but I didn't have time so I just used the betty crocker oatmeal cookie mix and added 1 cup of craisins and about 1 cup of chopped walnuts. ?They came out really good. ?If I find my soft oatmeal cookie recipe, I'll pass it along.?
