Easy appetizer recipes.....

We are having out fantasy football draft at our house Saturday and am looking for some quick and easy appetizer recipes. Any suggestions?? TIA!

    This is really good. It's directly from the pampered chef site, so the instructions are written using their products. Of course, just use what you have in your kitchen :)


    Touchdown Taco Dip


    1  can (9 ounces) bean dip or chili with or without beans
    4  ounces cream cheese, softened
    1/2  cup sour cream
    1  tablespoon taco seasoning mix
    1  garlic clove, pressed
    1/4  cup (1 ounce) shredded cheddar cheese
    1/2  medium tomato, seeded and diced (about 1/2 cup)
    2  green onions with tops, thinly sliced
    1/4  cup pitted ripe olives, sliced
    1  tablespoon finely chopped fresh cilantro or parsley
      Additional sour cream (optional)

    1. Preheat oven to 350°F. Using Small Mix 'N Scraper®, spread bean dip over bottom ofMini-Baker. In Classic Batter Bowl, combine cream cheese, sour cream, taco seasoning mix and garlic pressed with Garlic Press; mix well.
    2. Spread cream cheese mixture evenly over bean dip. Grate cheddar cheese over top using Rotary Grater. Bake 15-20 minutes or until cheese is melted.
    3. Dice tomato and thinly slice green onions using Utility Knife. Slice olives using Egg Slicer Plus®. Finely chop cilantro using Pizza Cutter. Sprinkle tomato, onions, olives and cilantro over dip. Garnish with additional sour cream, if desired.

    Yield: 8 servings

    Nutrients per serving: (1/4 cup dip): Calories 140, Total Fat 10 g, Saturated Fat 6 g, Cholesterol 35 mg, Carbohydrate 8 g, Protein 4 g, Sodium 330 mg, Fiber 0 g

    Cook's Tips: Pantry Southwestern Seasoning Mix can be substituted for the taco seasoning mix, if desired. 


    Another good one:

    Hot Pizza Dip Recipe


    1 package (8 ounces) cream cheese, softened
    1 teaspoon Italian seasoning
    1 cup (4 ounces) shredded part-skim mozzarella cheese
    3/4 cup grated Parmesan cheese
    1 can (8 ounces) pizza sauce
    2 tablespoons chopped green pepper
    2 tablespoons thinly sliced green onion
    Sliced French or Italian bread, toasted

    • In a bowl, beat cream cheese and Italian seasoning. Spread in an ungreased 9-in. microwave-safe pie plate.

    • Combine mozzarella and Parmesan cheeses; sprinkle half over the cream cheese. Top with the pizza sauce, remaining cheese mixture, green pepper and onion.

    • Microwave, uncovered, on high for 2-3 minutes or until cheese is almost melted, rotating a half turn several times. Let stand for 1-2 minutes. Serve with sliced, toasted French or Italian bed. Yield: about 3 cups.



  • I would do traditional football food: chili, hot dips (maybe spinach & artichoke or buffalo chicken), 7 layer or salsa/guac/queso, meatballs, potato skins, stuffed mushrooms, jalapeno poppers. Sliders would be fun, you could do mini burgers, pulled pork and/or sloppy joe's.
