Hi ladies,
I'm looking for some ideas of what to bring to an Italian themed group lunch at work. Either a main dish or an appetizer.
Here are the issues I'm running into:
1. It would have to be something that could be easily reheated. We only have a microwave, no stove or toaster oven to be able to cook anything on site.
2. I could potentially bring my crock pot.
3. We have very limited storage space - only two small mini fridges. So a large pan or tray of items would be out. I would have to do smaller containers or something I could assemble on site.
4. The last two work lunches I have done different salads so I would prefer to do something different.
So far I was thinking either an antipasto plate or a pasta salad with grilled chicken.
Thanks for your ideas and suggestions!
Re: Need ideas for an Italian themed work lunch
My first thought when you said you could bring your crock pot was to make meatballs. You could cook them almost all the way the night before and then throw them in your slow cooker with some sauce when you get to work.
However, if you make awesome stuffed shells you should bring those!
