Need ideas for an Italian themed work lunch

Hi ladies,

I'm looking for some ideas of what to bring to an Italian themed group lunch at work. Either a main dish or an appetizer.

Here are the issues I'm running into:

1. It would have to be something that could be easily reheated. We only have a microwave, no stove or toaster oven to be able to cook anything on site.

2. I could potentially bring my crock pot.

3. We have very limited storage space - only two small mini fridges. So a large pan or tray of items would be out. I would have to do smaller containers or something I could assemble on site.

4. The last two work lunches I have done different salads so I would prefer to do something different.


So far I was thinking either an antipasto plate or a pasta salad with grilled chicken.

  • either of your thoughts i think are great.  I was thinking baked ziti or lasgna but that is annoying to have to break it up into smaller containers, but it is easily re-heatable.

    We make an awesome stuffed shells and cheese recipe, which DH suggested last night, but again the annoyance of breaking it up into smaller containers.

  • My first thought when you said you could bring your crock pot was to make meatballs. You could cook them almost all the way the night before and then throw them in your slow cooker with some sauce when you get to work.

    However, if you make awesome stuffed shells you should bring those!

    i cant remember the last time i had a delicious stuffed shell!!

  • You could make a Caprese appetizer and have smaller containers with each ingredient in it. One for slices of tomatoes, one for sliced mozzarella, a bag of basil, and some olive oil and balsamic vinegar. The only thing that would really need to be refrigerated is the mozzarella!
