Cake Batter in Advance?

I am going camping and I want to make cake while there.  Can I mix the batter in advance if I am going to store it on ice?

Re: Cake Batter in Advance?

  • While you could do this and bake it up, it won't rise like it should and may taste a little different.  That's because when you add the baking powder and soda it reacts immediately.  When left for a day or two it is basically inactive.

An idea would be to pack the dry ingredients in a freezer bag and the wet ingredients in a separate freezer bag and mix them when you are ready to bake.
