Back to school menus?

Time for structure for me now that the kids are back in school and we're starting to find a rhythm here. So, what's on everyone's menus (past week or even future week!)?

Saturday: ground beef enchilada casserole (will never do that recipe again!), side salad

Sunday: grilled chicken kabobs (marinated in a hawaiian tangy sauce) and mashed potatoes

Monday: Chinese

Tuesday: leftovers

Wednesday: Hellmann's panko chicken, veggies

Thursday: chicken enchilada bake

Friday: hopefully leftovers

Saturday: we're supposed to take a drive down to Galveston for a beach day and other touristy things!

Re: Back to school menus?

  • we're still in hot mess mode.  What I actually mean by that is that we haven't been OUT of hot mess mode in at least 2 months.  Summer is hard as far as cooking goes!!  Here's what we have this week:

    Sun: burgers on the grill
    Mon: tacos
    Tues: rotisserie chicken, cheesy potatoes, peas (I was off yesterday, see the difference in the meal?)
    Wed: pasta
    Thur: chicken noodle soup
    Fri: ?? we need to get Jake a new pair of sneakers, so I'm thinking we might end up grabbing something to eat at the mall
    Sat: Bday party, so I don't have to cook, woohoo!

  • Emmy - I feel your "hot mess" pain. When DH left back in June to start his new job here in TX, I went into survival mode (that may have included ice cream dinner once). Then the move - living in a hotel for a week (we saw some microwaved chicken nuggets and mac & cheese that week!), settling in and restocking the pantry... it's been rough.

    I'm extremely lucky that I can work remote and I want to make sure that my breaks go towards prepping decent meals! Hang in there, Mom. You're doing great!

  • I'm struggling with meals lately! Although lunches have gone better than I expected!

    Sun: had a bday party with pizza but was early for dinner. Had hot dogs at home

    Monday: hot ham/provolone/roasted tomato paninis and garlic herb rice

    Tuesday: salsa chicken

    Wednesday: quesadillas using leftover chicken

    Thursday: was going to be meatball subs but forgot the meatballs! Probably will do baked ziti

    Friday: probably order out or go somewhere

    Saturday: invited to a BBQ so may do that or homemade pizza

  • Friday- Creamy Chicken Enchildas OMG, they were delicious! I did slightly adj. because I used a rotisserie chicken and Colby Monterey Jack Cheese blend. Next time I would add another can of Rotel just for more tomatoes.

    Saturday-pizza at Anthony's Coal Fire with my parents. Cheesesteak pizza is divine.

    Sunday-hamburgers, corn on the cob and loaded baked potato salad

    Monday-Grilled pork chops and leftover potato salad

    Tuesday-Grilled chicken breast and grilled eggplant

    Wednesday- I am going out, Nathan is on his own

    Thursday - Spaghetti and meat sauce

    Friday-Ukranian Food Festival

    Saturday-I am working so we will probably grab something out

    Sunday-Pulled Pork or French Dip Sandwiches, I haven't decided yet

    Monday-Burgers, hot dogs, asian coleslaw

    Thursday:   Kielbasa foil packet thing I found on Pinterest

    Friday:  Pizza or take out

  • Since it hasn’t been ridiculously hot this summer, I have mostly stayed on track. Although some busy weekends have made it hard to manage a grocery trip on Sunday and in some cases the busy schedule has led to more eating out than usual. Ahem. ;-)

    Friday: Sauteed veggies with quinoa, chicken fingers, kiwi & blueberries

    Saturday: Pizza at Kennywood

    Sunday: Panera

    Monday: Dinner at Heather’s favorite restaurant to celebrate the first day of school

    Tuesday: Family ate chips/hot dogs at H’s school event and then snacked after on cheese/fruit

    Wednesday: Quesadilla, Rice, Sauteed veggies, peaches

    Thursday: Steak, Corn on the Cob, Noodles, Smoothies

    Friday: Fish sticks, cous cous with peas, sweet potato fries, raspberries

    Friday: Frozen pizza

    Saturday: No idea

    I really have to buckle down and start prepping/cooking in advance and making more use of the crockpot.  It's just me and G on weeknights. I thought trying to cook dinner with a baby was hard. I had no idea how difficult it would be with a toddler, sigh.

    Tuesday: chicken wraps

    Friday: likely Max & Ermas to redeem a 20% off coupon on our way to the lake

  • I found a really good crock pot sloppy joe recipe if anyone is interested.  It reheats really well too.  I normally get 2 meals out of it. 
     
  • Monday: roasted chicken; baked potatoes; roasted carrots

    Tuesday: Chicken and gravy over homemade bread 

    Wednesday: DH and kids had leftovers.  I had class 

    Thursday: Shrimp and feta pasta; salad; homemade bread

    Friday: Pizza with friends, unless I get ambitious and cook something for them

    Saturday: Ham; macaroni salad; baked beans; crazy cake for my dad's birthday

    Sunday: Ham sandwiches; leftovers
