Eggplant ideas?

I'm getting eggplants galore from my farm share. I've done eggplant parm, fried eggplant and an Asian eggplant and chicken dish.

I got two more this week. Any ideas for them? I thought about making baba, but changed my mind on that one.

Stalking this post! I have two from last week (traded my corn for another) and just said to Nathan I need to make them today.

I am considering rollatinis. Nathan gets them at North Park Lounge and loves them so I think I am going to give them a whirl tonight.

We use the same farm share, so I'm not surprised you want ideas too. I just looked up this recipe and may try it.

Marinate strips (for grilling) or cubes (for sauteeing) of eggplant in olive oil, garlic and tomatoes. Grill or sauté for a side dish.

I also just grill rounds of it to serve with chicken.

Or toss it in with a recipe that uses zucchini.

Thank you! I knew I had a recipe somewhere for eggplant and could not remember where.

we slice it a little thick drizzle with olive oil salt, pepper, and grill it.

them make sandwiches on thick sliced Italian, or the garlic olive oil bread the market district has, with tomatoes fresh mozzarella and basil and red wine vinegrette.

so good! we eat it a ton  in the summer.

I just slice it and throw it in the grill dry on the hottest part if the grill. In the meantime I mix olive oil, basil, garlic, tomato paste from the tube, salt and pepper in a bowl. As soon as its cooked I cut it in small pieces and mix the hot eggplant in the bowl. I serve it hot but it's great cold the next day. If you have and peppers or mushrooms you can grill them and throw them in too.
