I'm getting eggplants galore from my farm share. I've done eggplant parm, fried eggplant and an Asian eggplant and chicken dish.
I got two more this week. Any ideas for them? I thought about making baba, but changed my mind on that one.

I also just grill rounds of it to serve with chicken.

we slice it a little thick drizzle with olive oil salt, pepper, and grill it.
them make sandwiches on thick sliced Italian, or the garlic olive oil bread the market district has, with tomatoes fresh mozzarella and basil and red wine vinegrette.
so good! we eat it a ton in the summer.
