What's cooking?

Feels like fall!  I am starting ww soon so I have to stop myself from baking and making fattening comfort foods!

Monday: I had no appetite so I had cereal.  Made ham, mashed sweet potatoes and "fried" green beans for the kiddo

Tuesday: chicken parm and pasta with homemade roasted tomato basil sauce with salad for DH and I, and I think peas for the kiddo.

Wednesday: crockpot chicken sausage and peppers.  This is my current favorite go to brainless dinner.  I use all fresh ingredients and it's awesome.

Thursday: chicken piccata, brown rice or whole wheat couscous and more peas (can you tell what my favorite veggie is? lol)

Friday: I'm going to attempt a tomato/zucchini/pepper soup with grilled cheese

Saturday: if we're not take out, leftovers

Sunday: tbd.  Looks like rain so I'd like to do something in the crockpot again.

  • DH is OOT this week, so DD and I are eating leftovers, sandwiches, and eggs for dinner.  very exciting

  • Sun - pizza because I was being lazy

    Mon - lemony shrimp with white beans over cous cous.  So freaking good and it only took about 20 minutes to make. Made some crispy Parmesan green beans but they were a bust.

    Tues - Bowtie pesto pasta with grilled chicken and grape tomatoes

    Wed - crockpot chicken tacos

    Thur - leftover chicken tacos

    Fri - Sun - headed up to Bloomsburg for the fair so I'll be stuffing myself with all sorts of delicious fair foods!

  • Monday- pizza

    Tuesday- Chicken, salads and a carb

    Wednesday- Chicken and dumplings in the crock pot

    Thursday- Out with a friend

    Friday- TBD- probably go out or take out

    Saturday- Out with my parents

    Sunday- I levave for business.  Eating out......

  • Monday--Veracruz style fish with spanish rice
    Tuesday--I've got turkey chilli in the crockpot right now
    Wednesday--some kind of pasta
    Thursday--baked chicken parm, from Skinnytaste, with orzo 
    Friday/Saturday--leftovers or takeout. I really want to have sushi and a glass of wine one of those nights. I've missed both so much over the last nine months!
  • Mon-Fri - whatever The Dude decides to cook for us while I entertain babies. We're still trying to figure out when and how to cook in our new lives.

  • OK so meals are a disaster in this house.  DH got some bloodwork back, and turns out he is highly allergic to tomatoes, beef, turkey, pork, high fructose corn syrup, and a long list of various vegetables and other things.  So, there goes about 95% of things I make.  And of course this all happens right after I stocked up at the store, so I have a million pounds of ground beef, etc.  So this week, we had:

    Monday: tacos- I made chicken ones for him (plain chicken, no salsa, blah), and ground beef ones for me, and we just used the leftovers for lunches.

    Tuesday: homemade baked mac & cheese and salad

    Wednesday: out to dinner for DS's birthday

    Thursday: leftover mac & cheese and salad

    Friday: DH leaves for a bachelor party...my plans are up in the air- might be taking a friend struggling with PPD to dinner but not sure if that will happen or not...so either I'll be out while the kids hang with my parents and eat there, or I'll heat up some of the chicken tortellini soup my dad made and sent over for me.

    Saturday: dinner at my parents' for my dad's birthday

    I really have to figure out next week.  I know chicken is safe, and I guess I will have to figure out pesto or sauces to do with pasta that aren't tomato-based...this is so insane.

  • @jamiedoll that is terrible! Feel so bad for you husband. That is going to take some time to get adjusted to such a big lifestyle change.

  • ugh, @jamiedoll, that sucks.  I hope you can figure out a meal solution that doesn't involve lots of separate meals.

  • Thanks ladies.  I really have to investigate what the heck he can eat. I will have to run out the ton of food I bought before knowing about this, so probably some separate meals for awhile, but moving forward will have to really figure this out.  It's extra hard too because I rely a lot on quick meals or things I can make ahead and reheat, since we work late weeknights and generally eat at 10pm or so.
