Menus?!

So, all this confession talk about not wanting to cook, I figured with the down time I had this morning, that I should figure out this week at least! So what's everyone eating?

Monday: hot dogs, tater tots

Tuesday: I got a rotisserie chicken for the next couple of nights!

Wednesday: Cheesy chicken broccoli pasta bake, Texas toast on the side

Friday: probably pizza leftovers in the freezer

Weekend - no idea. One day at a time, people!

  • I didn't have time to shop over the weekend, so it's going to be a weird week.

    Monday - chicken noodle soup and Parmesan pumpkin scones

    Tuesday - pasta with meat sauce, sweet potato fries, applesauce

    Wednesday - (after I stop at the market) Quesadillas, rice, corn

    Thursday - eat out after soccer

    Friday - I'm teaching so DH will probably get pizza

    Saturday - Dinner at a friend's house

    Sunday - go grocery shopping and start all over again!

  • I actually did more involved planning this week-
    Sunday- Beef stew with noodles
    Monday- Porkchops, apples & onions and cous cous
    Tuesday- Pasta with Roasted Cauliflower, Parsley and Breadcrumbs
    Wednesday- Vegetable Bibimbap
    Thursday- Pancakes, sausages
    Friday- unknown, likely takeout.
  • Also, Clare... I have no idea how you get three dinners out of a rotisserie chicken! The only way that works for me is if the third meal is soup made with the carcass! And if I don't tell Kev that the second half is for another dinner, he snacks on it until it is bare!
  • Clare-I was also wondering how you get 3 meals out of one chicken??  we eat the whole thing in one night between the 4 of us!

    Sunday: Cheesy Chicken & rice bake with black beans & corn (found on pinterest, though it was a bit bland, I'd add in some spices next time or maybe put it in soft shells instead of eating plain like a casserole)

    Monday: hot dogs, tater tots & broccoli

    Tues: Lasagna (that I had made and put in the freezer 2 weekends ago)

    Wed: Southwest chicken chili

    Thur: leftover lasagna

    Fri: I'm going out to dinner with a friend, so the boys will probably scrape together leftovers or just eat pasta

    Sat: we have a bday party, so I'm off the hook for cooking!

  • My hubby is actually home all week.... so that means I am cooking for the first time in well over a month. Ha.

    Sunday- Turkey Itailian Sausage and spaghetti squash

    Monday- our anniversary. I had just planned on something simple since DD had a dance class from 545- 615. DH text me in the afternoon that he took care of dinner and picked up filet and shrimp and baked potatoes. NICE! Knew I married him for a reason. lol.

    TUesday- marinated pork chops and veggies

    wednesday- grilled chicken and veggies

    thursday- roast

    Friday- we are going to pirate game and will eat near pnc park

    saturday- I am going to this Fall taste of Market Square thing in the afternoon with BFF and others for her birthday. So everyone is on their own. Ha.

    Sunday- TBD. :)

  • Ditto the rotisserie chicken. 1 meal for the 3 of us and then maybe some leftovers for my lunch.

    Sunday: turkey meatball subs

    Monday: dd's choice- chicken patty sandwiches and Mac n cheese

    Tuesday: pioneer woman's sloppy joes (made with ground turkey)

    Wednesday: baked breaded chicken and mashed potatoes

    Thursday: baked ziti

    Friday: its family movie night at dd's school so maybe grab some quick takeout

    Saturday: homemade individual pizzas

  • Sorry Clare, I wam with everyone else on the chicken. We get one meal and there is two of us! I usually buy them for pot pie, chicken enchiladas, etc. so that is the only way we get 2 meals, but never 3.

    Sunday: Chili and cornbread

    Monday:Pork chops and pierogies

    Tuesday: Eggplant Rollatini with sausage

    Wednesday: Something with the squash I got last week in our farm share!

    Thursday: Grilled Cheese with bacon and avocado, soup

    Friday: out or leftovers

  • I need to get more involved when it comes to meal planning.  I have been passing the buck to DH, but I need to start running a tighter ship!

    Sunday - Shrimp Scampi
    Monday - Kielbasa & Haluski
    Tuesday - Chicken Fajitas
    Wednesday - Grilled Cheese & Tomato Soup
    Thursday - Stuffed Peppers
    Friday - Left overs or Pizza
    Saturday - ??  Probably Take Out
  • Sunday- ate at the Greentree Octoberfest

    Monday - fish sticks, mac & cheese, salad

    Tuesday - meatloaf muffins, tater tots, salad

    Wednesday - grilled cheese (have to rush to an event at Hayden's school at 5)

    Thursday - breaded chicken, corn, yams

    Friday - pizza?

    Saturday - going out to dinner after the Lion King

    Thursday - My dad is responsible for G's dinner, I'm heading to the consignment sale with my mom. Lord only knows what they'll eat, lol.

  • Well, I will get 2 nights out of it, it appears!

    I shred it up last night and got 3 pizza bagels out of it for me and the boys (I didn't overload the bagels, though, bc Conall is picky as all get out), and 2 chicken sandwiches for DH.

    There appears to be enough to mix it into the cheesy broccoli pasta bake tonight.

    And I have to add that it was a crappy chicken - I had asked DH to stop and pick one up before he got Gavin from school, but heaven forbid he should make more than one stop on the way home from work. *eye roll* The store had ONE chicken left when I went out at 5p and it was a bit crispy and not so meaty. Duh - everyone stops on their way home from work! Grrrr....

    So, Caron, I applaud your husband for his anniversary dinner choice - I am highly impressed. You have a keeper!

  • I have been failing miserably at meal planning, but DH has been doing a good job of cobbling something together.

    Sunday: BBQ'd baked spare ribs; ranch mashed potatoes; roasted brussel sprouts

    Monday: Chicken Finger Salads with tater tots

    Tuesday: Hamburgers; mixed veggies and sweet potato fries

    Wednesday: I'll be at class I see a mcd's run in their future

    Thursday: I'm thinking potato soup with garlic cheddar biscuits

    Friday: Leftover soup or fend for yourself

    Saturday: Heading to my parents house.

  • I buy a Costco rotisserie chicken. They're huge, so I usually get two or three meals out if it as well.

    This week I'm using one for chicken salad sandwiches for us, with fries, carrots and salad.

    I also used it for indian butter chicken, and it made enough for two full meals for us,so three meals with one chicken.

    This week I also did and egglplant/sausage pasta, and we're getting two nights of that as well.
