  • Just got back from lunch time volleyball, where I was voted MVP for my team today.  Very nice. 

    Now I'm eating lunch at my desk and fucking around on here to avoid doing actual work.

    Actually, even this morning when I wasn't fucking around on here, I've been trying to straighten up my office a little bit in order to avoid doing actual work.  I have a big memo to write in the next couple of weeks, and I work better on stuff like that when I have a clean office.

    Lol! I know for sure I'm making a simple apple pie for H's great aunt who is really sick and loves sweets, even though she's not eating much these days. I have decided on the second pie yet. Thoughts? I have a million zucchinis, so I foresee a million varieties of zucchini breads.

     I eyeball everything, this recipe in no way needs anything to be exact.) Sometimes I add olives, or green chilies. I've also made these with shrimp and crab.)

    2 cans Aunt Penny’s white sauce (found with the spaghetti sauce or gravy at the grocery store)

    1 Large cans La Palmas green Enchilada sauce 

    4ish Boneless, skinless chicken breasts, cooked and shredded. (I shred grocery store roasted chickens - totally yummy.)

    2-cup packages of Mexican shredded cheese (or more if you like things cheesy)

    King size corn tortillas or flour, whichever you prefer

    Seasonings – Salt, pepper, garlic, “Season All”

     

    Pour all the white sauce and green sauce together in a big bowl. Mix with wire whisk until blended. Microwave tortillas between two wet paper towels to soften. Dip tortillas in sauce, fill with Chicken and some cheese, and roll. Put a little sauce on bottom of pan before you fill with enchiladas. After all the enchiladas are in the pan, cover with lots of sauce and then sprinkle lots of cheese over the top. Bake uncovered for 1/2 to 1 hour, or until cheese is brown and bubbly.

    The key is tasty chicken, since not much else is in them.   • I'm trying to get some work done so I can send it to my clients tomorrow afternoon. Doing this while trying to get an overtired baby to take a nap.

    I finally gave up on trying to get him to fall asleep and decided to take him for a walk (which is instant nap). In the time it took me to change my clothes and brush my hair, he finally fell asleep :-/

  • The key is tasty chicken, since not much else is in them. If I don't use roasted chicken, I stick chicken breasts in the crock pot with broth while I'm at work, then I throw those in the Kitchen Aid to shred them. If tried it with plain boiled chicken, and it's ok, but WAY better with something with a little flavor.  It really is easy and YUM.
    When I do them from scratch, I usually poach the chicken breasts in a big skillet on the stove with broth and a ton of seasoning.  I shred the chicken in the pan and then let it simmer with all the broth and seasonings until most of the broth is cooked off, then and add green chiles, salsa, bell peppers, onions, cheese and whatever else I have laying around.  Your way is so much easier!
