I'm in a rut. What's on your menu this week? Favorite go-to meal? 

Last week I made a yummy Lemony lentil soup in the crock pot. It was very Fall-ish and yummy served with fresh hot crusty bread. This week I am feeling uninspired.

    Rosemary, Cranberry Chutney, and Brie grilled cheeses with smashed cauliflower and brussel sprouts.

    Mexican rice and black bean casserole

    Naan pizzas w/ feta, peppercini, black and kalamata olives, and tomato.

  • I would love your lemony lentil in the crockpot recipe, if you don't mind sharing.

    DH and I cooked big things yesterday that we can eat all week.  He made a Portuguese kale soup, and I made a big pan of baked ziti, which is now sitting in the fridge just waiting to be baked.  We also cut up veggies to roast with chicken one night this week.  There was also some talk of picking up fish for one night this week, but I think all the food we have may get us through the week.  Nothing fancy, but at least it's all ready to go so dinners should be easy, anyway.
  • I have no idea what's on the menu this week.  Sigh.  I'm horrible at meal planning.  I do know I'm making roasted chicken tomorrow.  I have no clue what I'm doing tonight.

  • Lemony Lentil Soup (more like stew)

    3 carrots, chopped (1 1/2 cups)
    1 small onion, chopped (1/2 cup)
    2 Cloves garlic, minced
    1 dash crushed red pepper (optional)
    Nonstick cooking spray
    2 cups dried red lentils, rinsed (I used whatever lentils I had)
    4 1/2 cups no-salt added chicken broth
    1/2 tsp salt
    1 tbsp fresh chopped oregano (You can use dried.)
    1 tbsp fresh chopped rosemary (You can use dried.)
    1 tsp finely shredded lemon peel
    1 tbsp lemon juice
    Fresh ground black pepper to taste

    Place carrots, onions, garlic, and crushed red pepper in a microwave safe bowl, add 2 tbsp. water, cover loosely, and microwave on high for 4 minutes.

    Lightly spray slow cooker with cooking spray. Add onion mixture, lentils, broth, and salt. Stir to combine and cook on low 51/2 hours. (I cooked mine all day while I was at work.)

    Stir in oregano, rosemary, lemon peel, lemon juice, and pepper to taste.

    Done!

    Back in January I found a Groupon for The Fresh 20.  I think I paid $20 for a year subscription + 6 week lunch menus + access to the archives (so another 3 years of dinners).  Totally worth it for us!  We no longer eat the same thing week after week.  It is fresh seasonal food & gets us to try new things we wouldn't otherwise.  Each week I get the menu with recipes & a shopping list.  The recipes usually build off of eachother to help save time & money. (For example, last night I roasted a chicken in the crock pot.  We ate about half & the rest will be saved to be used in another meal this week).

    This week:

    Crockpot Garlic Chicken with Roasted Cauliflower & Sauteed Green Beans

    Shrimp Jambalaya

    Chicken Pot Pie

    Sausage & Mash with Aple & Kale Saute

    Quinoa with Scallion & Kale Pesto

  • Mon- Slowcooker Vegetarian Shepperd's Pie  
    Tues- Chicken Dumpling Soup
    Wed- Breakfast Casserole
    Thurs- Homemade pizza w/turkey pepperoni
    Fri- Baked Brie
    Sat- out or TBD

    We don't eat beef anymore, but these Mexican Stuffed Shells are awesome.

    1 small onion, chopped (1/2 cup)

    1 dash crushed red pepper (optional)
    Nonstick cooking spray
    2 cups dried red lentils, rinsed (I used whatever lentils I had)
    4 1/2 cups no-salt added chicken broth
    1/2 tsp salt
    1 tbsp fresh chopped oregano (You can use dried.)
    1 tbsp fresh chopped rosemary (You can use dried.)
    1 tsp finely shredded lemon peel
    1 tbsp lemon juice
    Fresh ground black pepper to taste

    Place carrots, onions, garlic, and crushed red pepper in a microwave safe bowl, add 2 tbsp. water, cover loosely, and microwave on high for 4 minutes.

    Lightly spray slow cooker with cooking spray. Add onion mixture, lentils, broth, and salt. Stir to combine and cook on low 51/2 hours. (I cooked mine all day while I was at work.)

    Stir in oregano, rosemary, lemon peel, lemon juice, and pepper to taste.

    Done!
    Thank you for this!  I bet if you're cooking it all day, you could probably even skip the microwave step.  I'm keeping this in mind for next week.

  • Menu planning is not my bag.  DH thaws something during the day, I figure out what to do with it when I get home from work.  Yesterday I made a small pot Salmon Chowder, today I am trying to figure out what I want to do with some shrimp.

  • OOOO! Shrimp!!!! I know a super yummy marinade. But, you need 30 minutes to an hour to marinade. 

    3 cloves garlic
    1/3 cup olive oil
    1/4 cup tomato sauce
    2 tblsps red wine vinegar
    2 tblsp Chopped fresh basil
    1/2 tsp salt
    1/4 tsp cayenne pepper

    OMG, makes really yummy shrimp. You can grill them or throw them in a pan.

  • DH had a terrible day today so I made his favorite: Pan-fried pork chops w/ rice and homemade gravy w/ veggies on the side. Super good for you. /sarcasm

    Tues: Baked salmon w/ lemon w/ steamed broccoli, carrots, and squash on the side. To make up for tonight lol.

    Wed: I have a late class so we'll probably just make salads or DH will cook something. (And by something I mean like waffles lol.)

    Thurs: Grilled chicken w/ whatever marinade I decide on. Sides not yet chosen, probably similar to Tues.

    Fri: Depending on whether or not I spend the day at a friend's house watching her little ones, either crockpot chili or this new chicken enchilada recipe I want to try.

    This is one of my favorites. So delicious! We're having spaghetti and meatballs tonight and probably the chicken on Thursday. We usually have enough for leftovers so I only make 3-4 dinners a week.
