I know our first round of first anniversaries are this weekend. I am so excited for ours next weekend, although all I can think of is eating our cake

A few months ago, I found this article on how to defrost a wedding cake for my friend. She said her wedding cake was just as delicious as it was the year before. Hope it helps some of you ladies!

Re: Wedding cakes
I can't believe it's been a year already!!!
I can't believe it has been a year!
We didn't have a wedding cake, we had brownies. Well, we had a cake to cut, but we didn't reall eat it, and our guests had the brownies. Our friend who baked them has told us she will bake us some fresh ones for our anniversary.
I hope all of your defrosted cakes are good!
We did cupcakes for ours. There were a ton of left overs at my parents house. My dad has been thawing them out and eating them throughout the year. He assures us they are still good. I did have one about 6 months after the wedding and it was fine. DH and I took two for our anniversary, as there aren't many left and my dad's pants were starting to get tight lol!
I'm at the end of the month so you'll all have to let me know how they taste!
