I'm not in much this week, but I'm definitely doing Mac and Cheese! I'll probably also do chicken tacos, and baked rigatoni.

Tonight, Hamburger fried with onion, Macaroni and Cheese

Tues- Sausage, veggie bake

W- Left overs

T- probably something easy as J will be home late.

F & S no clue.

Tonight, I'm making a pasta sauce.  I'm debating on whether or not to make actual pasta with it.

Tomorrow night is our anniversary so we're going out to dinner.

The rest of the week is up in the air.

Sunday - Buffalo Chicken Chili

Monday - Cod filet with Cilantro Curry Topping and Toasted Coconut with Glazed carrots and Brown Rice on the side

Tuesday - Spanish Spaghetti with Olives and a Pear, Walnut and Spinach salad on the side

Wednesday - Pork Tenderloin with Pomegranate Glaze with a side of Haricot Verts

Thursday - Oven-Fried Chicken Parmesan with Polenta and a Romaine Salad on the side

Friday - Spinach and Hummus Melts.

We don't have each day planned this week, but we cooked a lot over the weekend.

I made crock pot lentil soup (I forget whose recipe it is, but it's an NBCer's lemony lentil recipe, and it's delicious!)

DH made Portuguese kale soup

We made baked macaroni with chopped up fried eggplant in it (my solution to not having to eat eggplant parm - it gets lost in the pasta)

DH made chicken salad for lunches, so all the other stuff is just for dinners.  Soup and grilled cheese or soup and salads for dinner most of the week, I think.  Oh, and DH cut up potatoes and carrots and onions for roasting, so one night we might have some kind of fish with roasted veggies.

Tues- Apple & Cranberry Baked French Toast w/side of turkey bacon
Wed- (from the freezer) Chicken Taquitos (I work late)
Thurs- Grilled cheese w/apple & brie (I work late)
Fri- Stromboli
Sat- Slowcooker Sweet Potato Chili

It was mostly DH.  I decided to do lentils in the crockpot, but then he decided to do everything else.  A rainy day yesterday helped.  We're not usually that productive!  He also spent so much time cooking and prepping that we still have window A/C units in because he failed at taking them out this weekend, and my kitchen floor is disgusting because we never got around to washing it.  Oops.

Tuesday - DD and I are going to my parents' since DH has to work
Wednesday - Leftovers/Spaghetti Squash that I got at the pumpkin farm
Thursday - Weekly dinner with the inlaws
Friday - Belated anniversary dinner that we had to reschedule from last week
Saturday - Pizza

Yeah, not a whole lot of cooking go on here this week.

My shortlist is beef stew w/ beer bread, pork potstickers, pizza, salad w/ grilled chicken, strawberries, pecans and blue cheese. DH is working late all this week/all weekend, though, so I may not be that ambitious.

We're doing: Enchiladas, BLTs, Pasta, Loaded Baked Potatoes and Salad, and Breakfast for Dinner this week.  Not very inventive but it's been a rough month thus far.

S - Supper at my grandparents as it's Thanksgiving here in Canada this weekend

M- Popcorn and an apple with peanut butter. Ha. DH worked until 8:30 and I had class from 5-8:45.

T- Fried pork chops, rice and gravy, green beans. DH's favorite and it's his buddy's last day at work so I'm going to surprise him.

W- Salad with grilled chicken to make up for Tues.

Th- Grilled BBQ chicken, grilled corn on the cob, grilled veggies kabob. Guess who's picking up their dad's old grill that afternoon??

F- Grilled steak and roasted veggies.

S- Grilled marinated pork chops and roasted broccoli and asparagus.

S- Either leftovers from the week or some sort of casserole.

Today we had pistachio crusted chicken with fresh bread (one of DH's parishioners makes the most divine sourdough bread and sends DH home with a loaf at least once a month) and cauliflower.  Chicken was boring (new recipe).
Tomorrow we're having seared tuna pepper steaks over rice with a veg.
Wednesday I'm on my own, but there will be birthday pie for dessert when DH gets home
Thursday is grocery day, so all bets are off until we shop.  Since DH's birthday in on Wednesday but he's leading bible study, we'll celebrate on Thursday night.
