New Here: Slate Patio & Pampas Grass Qs

Hello, I'm new poster but I've been somewhat of a lurker. I have two questions.

First, we have just recently removed our Pampas grass but I'm sure there are still some roots under the ground. How did you ensure the grass was gone forever without having someone come in with a backhoe? Ours were up against the house (stupid I know) so we cannot dig deep without possibly digging into wires.

And we also removed a huge pond up against the house and have a ton of rocks and slate rocks and were thinking of making a patio with them. Did you do this? If so, (1) photos? (2) what did you put in between the slate rocks? grass? moss? pebbles? sand?
