Recipes using peppermint extract?

Anyone have any favorite recipes that use peppermint extract? I bought some today, at a store I don't normally shop at (because it was cheap) and didn't realize I already have an almost full one at home. I'm too lazy to return the $2 bottle, so I'm looking for suggestions for ways to use it up! Thanks in advance!

    The problem with peppermint extract is that you only need a little bit of it for each recipe. You can add them to any chocolate item, like make chocolate brownies into peppermint/chocolate brownies. Or chocolate chips cookies with peppermint. YUM!

    These are really good. They are super sticky, and some people I've given the recipe too have a hard time with them, but I love them. I copied them from a post I made on another message board:

    These are just awesome cookies! I use the round starlight peppermints so you could make these year round, but they are a fabulous Christmas cookie. They are from a cookbook called Great Cookies You Can Bake by Lois Hill

    Peppermint Crunch Cookies 


    1/2 C. unsalted butter, softened
    1/3 C. dark brown sugar, firmly packed
    1/3 C. sugar
    1 egg
    1/2 t. peppermint extract
    1 C. plus 2 T. sifted flour
    1/2 t. baking soda
    1/2 t. salt
    1 C. walnuts, coarsely chopped (I leave these out often)
    1 1/2 C. coarsely crushed peppermint candy canes (I used round peppermint candies)

    Preheat oven to 375°. Lightly grease two large baking sheets with butter or vegetable shortening.

    In a large mixing bowl, cream together the butter and sugars. Beat in the egg and peppermint extract. Sift together the flour, baking soda, and salt. Gradually add the flour mixture to the batter. Stir in the chopped walnuts and candy canes.

    Drop rounded teaspoonfuls of batter onto the baking sheets, about 2" apart. Bake for 10-12 minutes, or until the cookies are brown. Remove from the oven.

    After the cookies have cooled for 2-3 minutes, but are still warm to the touch, use a spatula to transfer them to wire racks to cool completely. 

    Here is a link to a pampered chef recipe that I made several times years ago. It uses a cake mix, and I try not to use them so much anymore. But, this is so very good !
