steak dinner

For my bridal shower, SIL sent out recipe cards.  I wanted something different for dinner and pulled out a card from H's cousin.  It was steak in a red wine sauce and it was delicious!  If anyone is interested, I'll post it for you.

  • The recipe calls for sirloin, but I'm not a fan, so I used skirt steak.  It also calls for mushrooms, but H and I don't eat them, so I left it out.  I used cabernet for the wine.  It says leave the skin on the garlic, but I am going to take it off and just put the whole, skinless clove in the next time.  I didn't really taste any garlic.

    2 sirloin steaks
    Salt and pepper
    3 table spoons olive oil
    1 lb button mushrooms, sliced
    2 shallots, halved
    3 garlic cloves, skin on
    1 bunch Oregano, chopped
    1 cup red wine
    3 tablespoons unsalted butter
    A splash of red wine vinegar

    Season the steaks with salt and pepper.
    Heat the olive oil in a saute pan over medium-high heat.
    Cook the steak, searing on both sides, about 4-5 minutes for medium rare.
    Add the mushrooms to the pan, cooking for a minute before adding the garlic and shallots.
    Cook until everything has softened and the mushrooms are browned.
    Add the oregano  and then deglaze the pan with the red wine and the splash of red wine vinegar.
    Cook to reduce the sauce by half, about 4-5 minutes.
    Remove the steaks from the pan and let them rest.
    Add the butter to the pan and stir to finish the sauce.

  • It was delicious!  I didn't have time to make lunch this morning, so I came home for lunch.  I had leftovers and wished it was those.
