My husband and I just moved and the past 4-6 weeks have been hectic, leaving little time for cooking and exercising. In our last place we were in the habit of working out at least 4-6 times a week and cooking healthy meals and would like to get back to that. Feeling very sluggish after the past few weeks of ordering takeout, painting and unpacking. Any suggestions for healthy meals that don't have a thousand ingredients? Crockpot recipes are especially welcome. We're looking for something to jumpstart us back into health-mode and starting with a chicken and veggie binge this week, but that can get so boring and we like good food.

I'm a fan of tossing a piece of fish in the oven and making a quick side like couscous and a veggie or a salad. It takes less than 15 minutes!
For crock pot recipes I like putting a whole chicken or chicken pieces in with some spices and a can of beer (something we usually have around). It always comes out incredibly moist! You can also do chicken & salsa in a crock pot.
I also like the Crock Pot Santa Fe Chicken from Skinny Taste. I usually make enough so that we can have it as a meal over rice and then I put leftovers into tortillas for frozen burritos. Great for another quick meal!
A big pot of chili is also popular in our house this time of year.
What about spaghetti squash and meatballs dish in a slow cooker. Two days before I made meatballs out of ground beef I had, I added some spices, herbs and one egg. What I needed was 1 medium spaghetti squash, 1 pound of ground sausage. 1 can of tomato sauce, 3 to 5 garlic cloves. and olive oil, and some Italian seasoning thyme, basil, oregano. For this recipe make sure you use a large 6 quart slow cooker like the ninja cooking system. Pour the tomato sauce, garlic, olive oil, hot pepper relish and the Italian seasoning into your slow cooker and stir nicely. Right after that slice the squash in half and scoop out seeds. Then put both squash halves face down inside the slow cooker. After that, move the ground sausage into meatballs, next fit in the sauce around the squash. Cook on High for Three hours or cook on low for Five hours. Then simply make use of a big fork to extract the spaghetti out of the squash then simply top with the meatballs and sauce. Garnish with herbs and enjoy.
