  • We're all out of sorts this week because DH still isn't feeling well and has to work late tomorrow and Wednesday.

    Tonight - I was supposed to go out with old co-workers but one just cancelled so I think I'm going to make quesadillas and salad.
    Tomorrow - Homemade potato soup from my mom
    Wednesday - Easy Italian Pasta Casserole
    Thursday - Leftovers for me.  I have a meeting at night.  DH and DD will either eat leftovers or go to his parents'.
    Friday - Who knows.

  • It's just the girls and I this week, so my grocery store trip consisted of a massive 'build-up-the-pantry' trek.  Which probably means that I need to stop reading and watching end-of-times books and tv shows.
    Also my one pg craving has been for miso soup, and I think I bought out the miso soup section at the store looking for the best one.

    Monday -- soup and Parmesan kale chips
    Tuesday -- hot dogs and Brussels sprouts on the grill
    Wednesday -- chicken and cabbage salad
    Thursday -- black bean burritos with fixings
    Friday, Saturday, Sunday -- eat out

    Thursday - Sea Bass w/Shitake mushroom sauce and a mandarin orange/spinach salad on the side

    Do you have a recipe for this? I love Chicken Cordon Bleu. I love the recipe I use, but it is kind of a pain, so I don't make it as much as I would like to.

  • @CeeCeeSugaPie  I found the recipe for the Chicken Cordon Bleu on pinterest.  It was just a can of cream of chicken soup mixed with a cup of 2% milk.  Pour half of that in the crockpot and top with 4 chicken breasts.  Layer the chicken breasts with a slice of ham (I used canadian bacon) and a slice of swiss cheese.  Pour the remaining soup mix over the top.  Then top with a box of stove top stuffing (6 oz box) and then pour in 1/4 cup melted butter and 1/4 cup of water.  

    Set crock pot on low for about 6 or so hours.

    Ooh, that sounds good. Thank you! I will have to try that. I might add a little white wine to the soup mix as well.
