Butter Nut Balls (or snowballs as some call them)
Pumpkin Snickerdoodles
Nana's Tea Cakes (which are like a shortbread/sugar cookie with icing)
Peanut Butter Fudge
I made the thumb cookies already. This weekend I planning on baking a good amount
8oz or 1 cup unsalted butter, plus alittle extra for greasing the pan
1 cup peanut butter
1 tsp vanilla
16 oz confectioners sugar
Line 8x8 baking pan with parchment paper. Lightly grease with butter. Combine butter and peanut butter in microwave safe bowl and cover with plastic wrap. Microwave 2 mins, stir and microwave addtl two mins.
Add vanilla and confectioners sugar to bowl. Stir with wooden spoon or spatula until evenly combined. The mix will be difficult to stir.
Transfer to prepared pan and spread into even layer. Place addtl parchment paper on surface of fudge. Refrigerate til cool, about 2 hours. Use large knife to cut into pieces.
