Everyone is posting about baking lately. I think I mentioned in another post that I love to cook but I almost never bake. I would like to, though!
What are your favorite cookie (or holiday treat) recipes?
Re: Cookie Recipes
my aunt makes this vanilla pretzel bark that I love love love!! I myself cannot bake at all so this is a great holiday recipe for me.
1# of pretzels, small ones, like twists or sometimes this year you can find little Christmas Tree ones.
1# of peanuts, no skins, salted
12 oz. Almond Bark Vanilla
Melt almond bark in microwave, don't overheat it will burn and you cannot mix after that. I do one minute, stir to see the consistency. Then I do 30 seconds next and check again. If needed try another 30 seconds or less. Burning ruins it so be careful. It all depends on your microwave, but that works on mine.
Mix all in large bowl till all coated. Sometimes I mix in Christmas M&M's for more color and fun.
Place wax paper on a cookie sheet and place mixture on it until it dries. Then you just break apart and bag it up.<?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />

Slowly add in flour and mix until combined.
Put in bowl, cover and let rise in a warm place for 1-2 hours.

I love ALL the cookies, but this is my absolute favorite recipe:
http://www.bhg.com/recipe/cookies/peanut-butter-munchies/
They're labor and time-intensive, but still easy, and so worth it. Yum!

PB balls recipe is
1 stick melted butter
1cup PPeanut butter and
1 (16oz) box of powdered sugar.
Mix well usually with your hands works best but it is super messy. Then refrigerate for an hour. Then take out and form into small balls.
Melt a bag of chocolate chips and a little bit of paraffin wax (like maybe a TB)
Dip the balls in chocolate and put on wax paper to harden.
I will look up the cheesecake bites in the morning...I just have the PB balls memorized

Crust
1 cup graham cracker crumbs
1/4 cup butter, melted
1/4 cup chopped pecans (optional)
Cheesecake
2 pkg (8oz each) cream cheese, softened
1/2 C sugar
1/4 C sour cream
2 eggs, lightly beaten
1/2 tsp. Vanilla extract
Chocolate
1 bag chocolate chips
1TB paraffin wax
1) line a 9*9 sq baking pan w/foil and greasethe foil. Combine the cracker crumbs, nuts and melted butter. Press into pan and set aside.
2) in a large bowl, beat cream cheese, sugar and sour cream until smooth. Add eggs, beat on low until just combined. Stir in vanilla and pour over crust.
3) bake at 325 for 35-40 min or until center is almost set. Cool on wire rack. Refrigerste until chilled and freeze overnight.
4) Take out of freezer and take out of pan. Peel tin foil off and cut 7*7 for 49 squares.
5) Melt chocolate chips and paraffin wax. Dip squares and place on wax paper.
Mine didn't work out this year because I ran out of Chocolate so I tried white chocolate which did not coat them well at all.
Also, I use parafin wax because it makes the chocolate shiny and harden well. I couldn't find any this year so I used Crisco which made it thin enough to dip in but they didn't harden well and they melt in your hands.
