I haven't been on the nest in what seems like a million years, but I need some help and this was the first place I thought of going because of how awesome you ladies were.
Here's my situation. Apparently my brain took a break last night when I was making a double batch of Bacon Jam. The recipe called for 3/4 cup of brewed coffee. I brewed the first cup and poured it into the measuring cup and then started brewing the second cup (I have a single up Keurig). So, I thought I was measuring it out right, but the jam never turned syrupy. Well, I came to realize around 2am (when my brain decided to get back to work and my kid woke me up), that I accidently measured 1 and 3/4 cups of coffee BOTH TIMES! So I put an extra 2 cups of coffee in the stupid jam! I don't know what the heck I was thinking and now I need to figure out a way to fix it. I really don't want to toss the whole thing because it's not a cheap recipe and it's takes forever to make.
Any creative suggestions would be greatly appreciated! TIA!
