NBR: Soda can cake trick

Has anyone tried using a can of soda instead of eggs and oil in a boxed cake mix?  I'm trying to find a cake that all three of us can eat, but all the eggless cakes I've make are just too dense to be enjoyable.  How about applesauce instead?

  • Yes, I didn't really like it. It was really dense and sticky but not in a good way. I'd do applesauce instead.

  • Try applesauce or even Greek yogurt! 

    You can also do the boxed white cake, frozen berries, and Sprite Zero cake. Minimal calories, moist and goooood.

  • Have you tried canned pumpkin? It makes it really moist as well!
  • I have used a small can of pumpkin, a boxed cake mix, and enough water to thin it out a little to make a couple of different types of cake, and they all turned out really well!

    You really can't taste it. Especially making anything with chocolate. 
  • Um, now I really want a chocolate cake made with pumpkin. Its probably a good thing I saw this AFTER I got home from the grocery store.

    I LOVE this!  I wasn't expecting it to be as good as it was.
  • I used flax meal when I thought I couldn't eat eggs (idiot allergist, nuff said).  It worked pretty well.  I ground my own because flax seeds are stable but the meal goes rancid quickly.

    Yes!  they are great!

    I've also made cobbler:
      1 (12-ounce) can diet lemon-lime soda1 box white cake mix2 (16-ounce) bags frozen berries
    Preheat oven to 350 degrees F
    Place both bags of frozen fruit into a 13 x 9-inch baking dish (do not thaw).
    Sprinkle the dry cake mix over the top of frozen fruit.
    Pour entire can of diet soda over the mixture.
    Cover with foil and bake 20 minutes.
    Uncover and bake an additional 40 minutes.
    Let cool and serve.

    **DO NOT stir the mixture. If you stir, you get cake. You get cobbler only if you don't stir! :-)
