  • Mon- Teriyaki noodle bowls
    Tues- Crustless quiche w/hashbrowns
    Wed- BBQ chicken pizza
    Thurs- Browned butter gnocchi w/broccoli
    Fri- H is on his own/I'm going out with my coworkers
    Sat- BBQ chicken wonton cups

    Favorite quick and easy meal would probably be quesadillas. Saute your favorite veggies, add meat or beans if desired. Place between two tortillas with shredded cheese. Brown both sides in a pan with cooking spray until crispy and cheese melts. Easy, good, and you can switch up the fillings.

  • Sunday - Mashed Potatoe stuffed Meat Loaf

    Monday - Chicken Cacciatore w/ Kale, Apple and cheddar salad

    Tuesday - Bowties with tomatoes, feta and Balsamic Dressing and Roasted Asparagus on the side

    Wednesday - Cheddar Burgers with Red Onion Jam with a side of baked chips and blue cheese dip

    Thursday - Pecan Crusted Rainbow trout with Creamy Grits and Sauteed Broccoli Rabe

  • Monday- Grilled BBQ pork chops, creamed corn, roasted veggies.
    Tuesday- Shrimp fettuccine alfredo. Might add broccoli.
    Wednesday- It's my birthday! So I better not be cooking lol. We'll probably go out.
    Thursday- Lemon pepper chicken, steamed broccoli and carrots.
    Friday- Family is having one big birthday dinner for me and my sister at a pub downtown.
    Saturday- Cubed steak and gravy, rice, some veggie.
    Sunday- ?

    Favorite quick and easy meal: My Thursday night meal for this week since I won't be home until after seven. I saute' boneless skinless chicken breasts with a lemon pepper seasoning mixture in a skillet. When they are almost done I throw some random veggies in a steamer bag with a little water and pop it in the microwave. 
    Sometimes I'll make a salad and put the chicken, sliced, on top instead.

    Mon - most likely a thin crust pizza since Hubs is working late
    Tue - The chicken pot pie I forgot about last week possibly with a salad.  His second late night of the week.
    Wed - Hubs is in charge.
    Thur- ditto of Wed
    Fri - I think I have some veggie chicken patties in the freezer still.

    Recently, my favorite thing has been crockpot salsa chicken.  It's the easiest thing in the world.  MH isn't as fond of salsa as I am so I don't make it often.

  • Monday - homemade pizza

    Tuesday - crockpot barbeque pork ribs

    Wednesday - beer, beef, and cheddar pie

    Thursday- turkey chili

    Friday - shredded beef tacos

    My favorite quick meal is gumbo - I make huge batches and freeze it.  DInner is ready in the time it takes to thaw.

  • Sunday: Garlic Herb Chicken, pasta, and mixed veggies

    Monday: Mexican Lasagna, Corn

    Tuesday: Wine Night, so out

    Wednesday: Gettin' my hairs did, so something fast, probably spaghetti and garlic bread

    Thursday: Meatloaf, Mashed potatoes, and carrots

    Friday: I'm going to a concert, so my sister and I will grab something in San Francisco. 

    Bonus: Other than something super basic like spaghetti, I like to brown up some onions and green and red peppers with a beef and jalapeno sausage, and serve over brown rice. Very easy, very fast, and very yummy!

    T - kale with eggs, chorizo

    W - edamame salad, pork chops

    R - sweet potato quesadillas

    Favorite quick dinner --- I'd have to say soup.  We're on the run a lot, and eat out a lot.  But I keep ready-to-eat soup around and pair with grilled cheese.  If I'm feeling fancy, I'll stick a slice of tomato in it and use Jarlesburg cheese.  I'm trying to stay away from canned/microwavable soups and freeze extra when I actually make soup, but freezer space is a premium.  I wish we had a garage or basement where I could have a storage freezer.  Sigh....

  • On a side note, H and I watched Food, Inc. yesterday.  I swear I've seen parts of it before, because it seemed so familiar, but regardless.  They spouted out some statistic about the insane quantity of meat average Americans eat every year.  H gives me the side-eye and says, "Not me."

    I'm a pescatarian, but I try to do a meat recipe for H and the kiddos once or twice a week, but the majority of our meals are what H calls Hippie Food.  God forbid he ever meet an actual hippie, because I'm far from that, ha.

  • Sunday and Monday - American chop suey, but with turkey meatballs instead of ground meat

    Tuesday and Wednesday - baked chicken (haven't decided on seasoning yet) with roasted potatoes and asparagus

    Thursday and Friday - I'll be away on a girls' ski trip, so DH and DD are on their own!

    Bonus - I think what we had last night and tonight is my favorite quick thing.  We recently got a Ninja crockpot thing, and it's so easy to saute the onions, garlic and peppers in the pot and then just dump in jar sauce, water, pasta and frozen meatballs and forget it for 1/2 an hour.  And only one pot to clean!

    Favorite quick meal - During warm weather: grilled pizza, Cold weather: breakfast for dinner

    Monday: Grilled Herb Chicken with Garlic Cauliflower Mash
    Tuesday: My best friend is giving birth tomorrow so we'll probably eat out. 
    Wednesday: Snapper fillets with peach/mango salsa and quinoa
    Thursday: Lime Cilantro Shrimp and Roasted Corn salad
    Friday: Hummus/Chicken/Tsaziki Wraps with butter lettuce, carrots and pickled cucumber

    Favorite easy recipe is turkey burgers. I don't have a recipe, but we mix the patties with egg, S&P, herbs, and a tiny bit of bread crumb to help them hold their shape. We grill on our grill pan and top with either sauteed onions& mushrooms or bacon and blue cheese. I like to serve them on potato buns.

  • I started Menu Monday on my blog now...I hope to stick to it, but here is what we plan on having:

    MONDAY- Chicken Lanzone with Oven Baked Potato Wedges

    TUESDAY-  Crescent Roll Taco Pizza

    WEDNESDAY- Prob some sort of take out

    THURSDAY- Honey & Spice Pork Taco's

    FRIDAY - Cheesy Tater Tot Casserole

    SATURDAY - Cheddar Chicken Bacon Ranch Pasta

    SUNDAY - Pork Chops with Creamy Mustard Sauce & Creamy Garlic Noodles

    Bonus: Favorite Easy recipe is Taco Soup, it is a dump and simmer recipe...can't get any easier than that :-)

    Wednesday : chili cilantro crockpot chicken with broccoli

    Thursday : maple mustard chicken and veggie tian (this is one of my all time favorite meals)

    Friday : bratwurst and sauerkraut

    Bonus: In the cooler months I like to do nachos, and in the warmer months, shish kabobs are where it's at!

    Monday - Leftover lasagna from last night.

    Monday: Pizza because the tuna isn't thawed yet
    Tuesday: Linguini with Calamari and Garlic (DH has bible study so I can eat delicious stinky pasta)
    Wednesday: Tuna Pepper Steak over rice with a big salad
    Thursday and Friday will depend on the grocery store.

    As for quick and easy, I guess this tuna recipe that I have that is kind of like a deconstructed tuna sushi roll.  Sear the tuna for 90 seconds on each side and serve it over brown rice with cucumber, avocado, and nori, drizzled in a sauce of lemon, soy, and sriracha.  Yum!

    @sheperdjel that cheddar chicken bacon ranch pasta is so good.  I made it after you posted about it before and it's in our regular rotation too.  So good!
