    Monday - bourbon chicken, oven fries, and veg

    Tuesday - smoky beef roast and polenta

    Wednesday -  pork and salsa verde

    Thursday - cracker chicken

    Friday - out to eat with family

    A lot of work, but worth it - pasties.  They are beef, pork, and vegetable pies.  There is just a lot of chopping involved.  Fortunately, they freeze well, so I make a huge batch once a year.

  • Monday - Sunday: Eating out. I'm on vacation. Our hotel room actually has a full kitchen, but we are out and about too much for cooking.

  • Sunday:  Asparagus Shepherd's Pie

    Monday:  Cowboy Flank Steak with Sweet and Smokey Beans

    Tuesday:  Crockpot Chicken with Apple and Sweet Potatoes

    Wednesday:  Smokey Shrimp and Parmesan Polenta Cakes

    Thursday:  Herbes de Provence Lamb Chops with Orzo

    Friday:  Maybe some Portobella Pizzas

    Tuesday:Leftovers

    Wednesday: Cilantro Lime Shrimp with Corn, Black beans & Rice

    Thursday: Probably leftovers, or I may turn use the shrimp to make quesadillas

    Friday: Who knows?

    Bonus: Chicken Cordon Blue with White Wine Sauce or Jambalaya. Really anything that takes more than 45 minutes is saved for the weekend anymore.

    Bonus : I like to make butternut squash and sweet potato gnocchi.  It takes hours to make, but it is so worth it.

  • M - Tuscan Kale Salad with brats/hot dogs

    W - Broccoli salad with planko-breaded chicken tenders

    R - Waldorf salad, not sure for the kids

    Bonus -- we eat out for pretty much every special occasion and on weekends.  I used to bake stuff for special occasions, but DH and kids have absolutely zero sweet tooth and I would end up eating all of it.  So I don't do that anymore.

  • Oops, missed the bonus question. This Butternut Squash Risotto is one of my favorite special occasion dishes. It has a slightly different method of cooking the rice than risotto normally does, so it's less work which is great.

  • Mon- Still deciding lol.
    Tues- Probably frozen pizza since I won't be home until late.
    Wed- Crockpot chicken and dumplings
    Thurs- Well...DH and I are going to see if we get pre-approved for a loan on the house we want. So either we're going out to celebrate....or I'm going home and going to bed lol.
    Fri- Chicken Tacos
    Sat- My sister is coming over so whatever she wants me to cook.

    Special dinner: Every now and then we do a mini-Thanksgiving type of thing. When family comes over, I'll do a roast turkey or chicken, a few casseroles, tons of sides, homemade rolls, desserts. It's all worth it but it takes all day.

    @BabyRN2006 this is really good but very spicy...i suggest you cut back some spices if you don't care for very spicy :-)

  • @ThisModernLove - it was really good!  H said that the lemon really took away the bitter of the kale.  You know it's a good recipe if he willingly eats a veggie outside his comfort zone.  :)
