Monday - bourbon chicken, oven fries, and veg
Tuesday - smoky beef roast and polenta
Wednesday - pork and salsa verde
Thursday - cracker chicken
Friday - out to eat with family
A lot of work, but worth it - pasties. They are beef, pork, and vegetable pies. There is just a lot of chopping involved. Fortunately, they freeze well, so I make a huge batch once a year.
Tuesday:Leftovers
Wednesday: Cilantro Lime Shrimp with Corn, Black beans & Rice
Thursday: Probably leftovers, or I may turn use the shrimp to make quesadillas
Friday: Who knows?
Bonus: Chicken Cordon Blue with White Wine Sauce or Jambalaya. Really anything that takes more than 45 minutes is saved for the weekend anymore.

Bonus -- we eat out for pretty much every special occasion and on weekends. I used to bake stuff for special occasions, but DH and kids have absolutely zero sweet tooth and I would end up eating all of it. So I don't do that anymore.

Wednesday: Some sort of chicken, thinking of trying that chicken lazone that's been on pinterest
