Pesto Pasta with sundried tomatoes and asparagus
Russian chicken over cous cous with peas
Sweet & Sour Chicken with fried rice

Salmon with wild rice and veggie

I made it last week for the first time and it was amazing.  Such an easy weeknight meal.

I made it last week for the first time and it was amazing.  Such an easy weeknight meal. 

Excellent!!! This will be my first stab at it too. I love easy meals during the week and my DH LOVES asparagus!!!

I'm having a "store bought, roasted chicken" week.

Tonight taquitos with the roasted chicken, guacamole, and margaritas

Monday: Roasted chicken salad

Tuesday: Leftovers

Wednesday: Shrimp and leek sauté over pasta

Thursday: Crockpot balsamic chicken with green beans and sweet potatoes 

Friday: Leftovers

That's the Irish pancake thing right?  What's in the filling usually?

@BlueBirdMB, yep, it's an irish potato pancake. I've never made them before but I've had them at restaurants. I'm not sure if there is a traditional filling or not, but we're doing a creamy chicken filling.

I'm not entirely sure of our menu, but my goal is to use the meat in our freezer; it's getting too full! 

Fri-Sun: away

Mon: sweet potato, black bean & kale quesadilla (having corned beef & cabbage for lunch)

Tues: pork loin w/ mashed potatoes 

Wed: shrimp & cashew stir fry

Thurs & Fri: not sure yet

Sat: pollo potacchio over polenta
