Buttermilk chicken tenders is my family's favorite recipe. I buy chicken tenderloins or tenders or strips or whatever they're called, put the chicken in a baggie with the buttermilk overnight, omit the tobasco for the kids, and use panko as the breadcrumbs.
My husband loves chicken parm and this recipe is super easy and fast.

Cornbread Chicken Pot Pie
My family loves this so much. It's easy it you cook the chicken ahead of time. I reduce the amount of milk to the amount on the cornbread box (I think 1/3 cup) and I think it cooks better that way. And we add some frozen peas and carrots to sneak some more veggies in there.

2-4 boneless, skinless, chicken breasts, pounded to uniform thickness
2-4 tablespoons butter (1 per breast)
1 medium onion, sliced into rings
salt, pepper, paprika
Preheat oven to 350F
Depending on the size of your breasts, line either an 8x8 or a 9x13 baking dish with foil, leaving enough foil to pull the ends together and close.
Place chicken in prepared pan.
Top with onion, season with salt & pepper.
Place slices or pieces of butter top of each breast/onions.
Sprinkle with paprika to taste.
Fold over and seal foil around chicken.
Bake at 350F for 20-30 minutes, or until chicken registers 165F with an instant read thermometer.
If desired, open foil and broil for 2-3 minutes to brown chicken & onions.
I've also done this at 400F when I've been baking potatoes. I just adjust the baking time.

I like this Artichoke Chicken Bake, Chicken Pot Pie, and Chicken Cordon Bleu. I actually use a different recipe for the chicken cordon bleu, but this one is almost exactly the same. I serve it and the artichoke chicken over egg noodles. I also like to make Chicken Chesapeake, which is basically just chicken breast with crab dip on top. I just make my normal crab dip and then bake the chicken with that on top.
